Amazing recipe! This was the first time I made couscous and I definitely tweaked it to my liking. Due to the expensive price of peppers, I used white button mushrooms. I also used just regular onions, garbanzo beans instead of black, and lemon juice instead of lime- It was all about what I had on hand + thriftiness (I'm a college student after all) I did not even have the red wine vinegar and it still all came together really well! I'm excited to eat these leftovers & will surely make again!
