Indian Shrimp Curry
We sauted the onion and added some chopped celery and carrots. We also added a couple of chilis for heat. Added an extra can of tomatos and coconut milk and did 1.5x the spices. Very delightful!

Black Bean and Corn Pasta with Chicken
Made this tonight and have mixed feelings. Everything but the pasta seems to work. I'd probably try it with brown rice next time. As others have mentioned, DEFINITELY season the chicken before cooking. The broth and corn/beans were great.
