Spaghetti Squash Dip

Mild and boring as directed. I then added sauteed onion and garlic, parsley for some color- still boring. Added a gigantic squirt of yellow mustard, which did add more flavor interest. I like strong, bold flavors. This wasn't either when prepared as directed. I will not bother to save this recipe.

Kids Favorite Meatloaf

Very good flavors! YUM! My whole family liked this a lot, however we agreed to make it into Sloppy Joes instead of meatloaf for the next go- round. (I used Panko bread crumbs instead of the cereal squares) Definitely saving this one! :)

Cream Cheese Frosting II

Yummy! My family (((really))) enjoyed this with carrot cake (box mix). This frosting was SO good- it made the box mix cake seem completely unworthy. Next time, we'll use this delicious frosting on a more deserving homemade carrot cake. With raisins. Oh, yesss! Creamy, cheesecake-y deliciousness. You know it's great when you wake up thinking "Mmm, cake for breakfast!" :)

Eggplant Rollatini

WONDERFUL recipe for Eggplant fans! Easy to make. YUMMMMM! I omitted the prosciutto & added Italian seasoning to my ricotta. * Also boiled the eggplant for a couple of minutes first (because that's supposed to get rid of any bitter flavor. Had to pat it dry then dip in beaten egg. The suggestion of adding spinach sounds great, so next time I will try it that way.

Sloppy Joes II

Great recipe, and so easy! Never buying Manwich again... But as prepared as directed, MUCH too sweet for my taste. (I'm thinking I could have added a tiny bit of vinegar to cut the sweetness...) Add the Brown Sugar in a smaller amount and taste it, rather than measuring as directed.

Tortellini Pesto Salad

WONDERFUL! I was skeptical of the mayo-vinegar-oil combo, but I followed that part of the recipe, with the pesto & parm cheese- and it was SO GOOD! Omitted carrots, garlic & spinach, used BLACK OLIVES. (I just can't do green olives with pesto- it sounds kinda gross.) Added frozen broccoli (thawed) and Roasted Red Peppers. Easy to make, and something different for a Potluck. I will be making this again!Deelish!

Boudreaux's Zydeco Stomp Gumbo

Excellent! Produced groans of happiness from hubby. Used less chicken broth & more crushed tomatoes, canned green chiles instead of fresh, and less Cajun seasoning. It makes a BIG pot... 10 servings? That must be based on feeding 10 hungry linebackers- ? Lots of leftovers, but looking forward to enjoying more! *Cajun seasoning we used (Dinosaur BBQ Cajun Foreplay) was very salty, so reducing the amount, using about 2/3 of the 1/4 cup called for, was a good decision. Turned out just right! MmmmMmmMmm!!

German Zwiebelkuchen (Onion Pie)

Yum! So happy I tried this recipe. It surprised me how much I liked it!! "Cheated" with pre-made pie crust. Modified to use about 3# onions and half of other ingredients. And I spent the time to make the lattice topping...Beautiful. Cooked in less time- I think it was done in about 40 minutes. Definite repeat! Great with soup. Served it with veggie-cabbage soup. Leftovers were great, too.
