Aunt Norma's Rhubarb Muffins

Made three small adjustments: left out the walnuts (I'm not sure that would go with this...), used only about 3/4 cups brown sugar, and had an extra half cup of rhubarb so I used it all. I also did the milk with vinegar trick instead of buttermilk. These are wonderful! Fluffy, moist, tasty, great crumbly, crunchy top!

Coconut Macaroons III

I have never made macaroons before, but after having these, we will be making them again. They were fantastic. We drizzled dark chocolate over some of them. They were delicious either way. We made them from fresh coconut, which I imagine makes them that much tastier.

Brooke's Best Bombshell Brownies

Baked almost as directed (a little less sugar) and they were fabulous! I have always loved box mix brownies because they are more fudgey but I will be doing these from now on - very fudgey and dense. Yum!

Lentil Soup with Lemon

Followed this exactly minus the salt (we use VERY little salt in our house and our tastes have adapted to very low sodium food) and added an extra splash of lemon juice. My husband said he could do without the extra lemon juice, but I loved that little extra unexpected sourness. Either way, we both loved this soup. Very fun twist on the standard lentil soup and we will be making it again and again I am sure.

Easy to make, pretty healthy (used low fat cream cheese and a little extra spinach), and yummy! My kind of recipe. We are going to add cannelloni beans next time.

Salmon Wellington

Delicious! And simple to make! I used very spicy Coleman's mustard, and much less of it, and loved the teeny bit of the kick. Definitely need about half the mustard/mayonnaise mixture, though. Was thinking about doing this with phyllo to make it a little healthier next time.
