Make Ahead French Toast

Wow! This is definitely the best make-ahead French Toast recipe I've come across. The secret to its success is in only dipping the bread in the egg mixture, rather than pouring the mixture over top. It keeps it from getting too soggy. The recipe's proportions aren't quite right as the quantity of egg mixture easily dips an entire 1lb loaf instead of the half loaf the recipe calls for. No problem - I just used the whole loaf and made two pans! I added a layer of fresh sliced peaches over one pan before pouring the caramel sauce. It was delicious, though that pan was definitely a bit soggy due to the extra juice.

Rainbow Trout with Yogurt Sauce

The yogurt sauce wasn't as flavorful as I'd hoped and the combination of dill and cucumber wasn't quite right. If I make it again, I'll make a sauce that's more like India raita to go with.

Slow Cooker Scalloped Potatoes with Ham

Fabulous! I used peppercorn ranch which gave it a nice kick. You probably don't need quite as much cheese as it calls for but if you're feeling decadent, go for it.

Chicken Suiza Cornbread Bake

The flavor in this is super! It reminds me of the corn casserole my grandmother used to make. I expected the bottom to be a firm cornbread "crust" and it comes out very mushy instead but it was still very tasty.

Grilled-Salmon Lemon Basil Cream

Wow! This is tasty! I also baked the salmon rather than grilling and I used evaporated skim milk in place of the half and half to cut down on fat. It worked great. Will definitely make again.
