Sicilian Meat Roll

I've made this many times, and it never fails to please. Everyone has loved it. I've made it with ground sirloin and ground turkey, both turn out great. Pairs well with pasta or garlic mashed potatoes. Comfort food at its best!

Jennie's Heavenly Slow Cooker Chicken

I'm sorry, but I found this dish to be too heavy and the seasoning was overwhelming, salty and tasted fake. I love to cook and eat and can appreciate decadence as well as anyone, but this dinner made me feel guilty eating it... like it was a big, convenience-food, processed, heavy mess. My kids hated, and my husband and I just managed to get it down.

French Breakfast Muffins

I made these muffins this weekend for company. I wanted to make something a little sweet to accompany sausage & eggs & fruit, but didn't feel like pancakes or French toast. These were super easy to whip up...no mixer to clean, and they bake quickly. They were a great addition to the savory breakfast items & fruit...rich texture & lightly sweet. They're small muffins, but that was great for us, as we feel so many carb foods are far too big and unhealthy. Also, the petite size made them seem extra- special. I didn't change a thing, and I'm glad because they were simple and sweet and perfect.

The Best Parmesan Chicken Bake

I made this last night, and the whole family enjoyed it. This will go into my rotation as one of my easy, convenient suppers that I know my family will eat. There are few ingredients,and it's super quick and very tasty. It's "homey" comfort food like baked ziti or something like that. Serve over healthy, whole grain pasta with a nice, green salad. If you use quality chicken and your favorite pasta sauce, I don't see how you could go wrong.

Chicken Breasts Pierre

I made this recipe last night, and we all loved it. The only change I made was that I used a large can of diced tomatoes instead of stewed...that's what I had on hand, and, based on reviews, I figured it would be fine. I agree with those reviews...the resulting dish was definitely sweet enough. The whole meal was a delightful combination of spicy and sweet, not too much of either. I agree that it really reminds me of Cuban flavors I've enjoyed in Miami. Over rice, it was a perfect, DIFFERENT, AND DELICIOUS chicken dinner.

Mom's Paprika Chicken with Potatoes

Delicious, comfort-food meal! Just tried this and it is wonderful. As described, with a fresh, green salad, it's a complete meal. Just like my mom used to make. I did add some small halved yellow onions, but that's the only change I made. The author of the recipe wrote a correction on the amount of paprika...1 & 1/2 TB of paprika is perfect. Gotta love one-pot meals!

Cream Cake Dessert

This is an excellent recipe! Easy and delicious! I garnished with strawberries instead of raspberries...perfect summer picnic dessert. It was gone so quickly and everyone loved it. Some tips: After cooling on a wire rack and cutting in half, as directed, I used a hard plastic placemat to slide under the top half and remove it. After frosting and reassembling, I noticed the top layer was little uneven and scratched from cooling on the wire rack, so I dusted the top with powdered sugar...beautiful!

Applesauce Cake IV

I first made this cake this past October. I had applesauce to use up, and this sounded like a nice fall dessert/snack cake. It far surpassed my expcetations. Very moist, buttery and the apple flavor is perfect! The pinch of salt perfectly brings out the butter flavor and balances the sweetness. I use chunky applesauce that is sweetened, since that's what I keep on hand for my kids, and it turns out great...not at all too sweet. I just made it again for the fifth time. It's a perfect, homey, comfort-food snack cake, brunch cake or dessert.
