Tater Tots® Casserole

This recipe is great as written.. but I made a few additions the second time I made it and it is even better. I added an extra can of soup (I used the original amount of milk), added a bag of frozen mixed vegetables, and a can of mushrooms. This allowed me to stretch the meal out for my hungry crew and the taste was amazing. What makes this recipe stand apart from others of its kind is the seasonings.. I did not change those at all and the flavor is wonderful. This will be a regular at our house for sure!

Jalapeno Strawberry Jam

I've made this twice and it has set nicely both times. The first batch I followed the recipe as written and although it is delicious.. I wanted a bit more heat. The sweetness of the strawberries overpowers any heat the jalapenos have even with keeping the seeds. The second batch I used a little more jalapeno and it still wasn't quite hot enough. I think I may throw one or two habanero peppers in the next batch (finally a use for those hot peppers!) This is a very good recipe and I like that I can substitute other peppers or mix peppers in order to get the exact taste I desire and still have a pretty jam that sets up well. Great for gifts too!

Summer Squash Bread

Absolutely delicious! Better than any zucchini bread I've ever made. Moist, full of flavor, and a very pretty bread! As written it is very good, but the nutmeg is strong and the bake time was a little long for a 9 x 13 pan. Second time I made it I reduced the nutmeg to 1/4 tsp. and used a full tablespoon of cinnamon because I just love cinnamon that much. I replaced 1/2 of the oil with applesauce to reduce the fat and 1/2 of the flour with white whole wheat flour, and baked for 40 minutes. I drizzled a little bit of a powdered sugar & milk glaze (not necessary, just made a pretty presentation) It was even better with the modifications and my fiance' loved it. A great way to use up the abundance of squash I am getting out of my garden. I froze a ton of shredded summer squash in 2 cup portions so I could make this at holiday time for gifts. It's that good.

Chicken Pot Pie IX

Double the sauce and I like to add diced potato to the filling. Use homeade stock! This makes a delicious deep dish pie!

Yeast Dumplings

I have tried so many recipes looking for a chewy dumpling ... This is the perfect one!! I absolutely love the texture: they are chewy but not tough at all. I used all milk, no water when I made them and be sure to use real butter for best flavor. This made about twice what I needed so I froze half before cooking. I cook the frozen ones straight out of the freezer into boiling broth and they were great. These dumplings are great with a sweet dish as well. Spiced peaches and whipped cream with this recipe is fantastic.

Award Winning Peaches and Cream Pie

This is a FABULOUS recipe. I would call it a peach buckle rather than a pie, but it is delicious whatever you want to call it! My changes were extremely minor: I used 1.5 times the peaches called for (so add a small can of peaches to the large), and I added some almond extract to the cream cheese mixture. That's it..the recipe is perfect other than that. It is not overly sweet, bakes up to a lovely "buckle" and is my favorite thing to pair with my morning coffee at the moment! My boyfriend LOVES it and I plan to make it often!

Amish Bread

This is my favorite basic white bread. I use melted butter in place of the oil and milk for the water. This gives a beautiful soft crumb and tastes delicious!

Fish Tacos

Very, very good! The batter is outstanding; probably the best I've ever tasted and will be my standby now. For the white sauce, I eliminated the capers completely, and used fresh cilantro in place of the oregano. I much preferred the flavor of the sauce with cilantro.

Penne and Vodka Sauce

Excellent recipe. Add a couple cloves of garlic, and a couple of shallots and it's wonderful! I have made this without the pancetta and I added a bunch of fresh basil leaves to it and that was really good too.

Antipasto Pasta Salad

Very good recipe. Even my husband liked it and he normally passes on pasta salad. Next time I will use a white balsamic vinegar because the visual appeal is lost when you add the regular balsamic.

Cake Mixes from Scratch and Variations

I'm a cake decorator, and I've been using this cake mix recipe for years. It is the absolute best tasting cake in any of it's flavor variations. Anyone who had trouble with this recipe either 1) didn't have fresh baking powder or 2) didn't realize that from scratch cakes do NOT look and taste like boxed mixes (and that's a GOOD thing). I recommend using butter flavor shortening and only use real vanilla.
