About this Cook
I'm full of contradictions. I am a fitness buff, but my favorite foods to cook and eat are good ole comfort foods! A perfect day to me is being snowed in during a blizzard so I have no choice but to cook a nice pot of chicken and dumplings and bake a perfect apple pie. I live for those days!
My favorite things to cook
I love sourdough bread and have successfully kept a single starter alive and well for 6 years. Would have been longer if I didn't have to move across country! I am now experimenting with using the starter in things like waffles, pancakes, and quick breads and muffins. Nothing beats a good old sourdough loaf though...
My cooking tragedies
Lemon meringue pie. Why I cannot nail this one has me baffled.

Tater Tots(R) Casserole
This recipe is great as written.. but I made a few additions the second time I made it and it is even better. I added an extra can of soup (I used the original amount of milk), added a bag of frozen mixed vegetables, and a can of mushrooms. This allowed me to stretch the meal out for my hungry crew and the taste was amazing. What makes this recipe stand apart from others of its kind is the seasonings.. I did not change those at all and the flavor is wonderful. This will be a regular at our house for sure!

Jalapeno Strawberry Jam
I've made this twice and it has set nicely both times. The first batch I followed the recipe as written and although it is delicious.. I wanted a bit more heat. The sweetness of the strawberries overpowers any heat the jalapenos have even with keeping the seeds. The second batch I used a little more jalapeno and it still wasn't quite hot enough. I think I may throw one or two habanero peppers in the next batch (finally a use for those hot peppers!) This is a very good recipe and I like that I can substitute other peppers or mix peppers in order to get the exact taste I desire and still have a pretty jam that sets up well. Great for gifts too!

Summer Squash Bread
Absolutely delicious! Better than any zucchini bread I've ever made. Moist, full of flavor, and a very pretty bread! As written it is very good, but the nutmeg is strong and the bake time was a little long for a 9 x 13 pan. Second time I made it I reduced the nutmeg to 1/4 tsp. and used a full tablespoon of cinnamon because I just love cinnamon that much. I replaced 1/2 of the oil with applesauce to reduce the fat and 1/2 of the flour with white whole wheat flour, and baked for 40 minutes. I drizzled a little bit of a powdered sugar & milk glaze (not necessary, just made a pretty presentation) It was even better with the modifications and my fiance' loved it. A great way to use up the abundance of squash I am getting out of my garden. I froze a ton of shredded summer squash in 2 cup portions so I could make this at holiday time for gifts. It's that good.
