Easy Devonshire Cream

This was good along with Grandma Johnson's Scones (also on allrecipes). I wanted to get as close as I could to authentic Devonshire cream, as my daughter was supposed to serve something from the UK for her 4H international night. Some people just skipped the scones and ate the cream! It wen't over quite well.

Grandma Johnson's Scones

So many reviews, but I'll add mine - This was great, just like everyone said! So Grandma Johnson must of known her scones! My daughter and I made these for her 4H International night with the mock Devonshire cream (recipe also on Allrecipes), and we used chocolate chips instead of raisins, as we weren't sure how many people would like the raisins, and since we don't like them much in our family, we didn't want to be stuck with leftovers that we wouldn't eat. These went over quite well at the 4H international night (everyone had to research a country, and make a dish from that that country). I don't know if I'd make this again, as I don't know of too many events where I'd use these, and they were rich with the cream... but yummy just the same!

Ham and Pineapple Couscous Salad

This was fabulous! The onion was a little strong, so I only put in half of the amount the recipe called for, as my husband doesn't like onions, and glad I did, when I read the other reviews. It didn't say how much mustard, so since I'm not a big fan, the 1st time I put in 1 teas. It was perfect. 2nd time, I put in 2 teas. just to see, and it wasn't quite as good as it was the first time, but still very good. I think the pineapple juice with the oil and just a touch of the mustard is what makes the whole dish so flavorful. I'm planning to serve this at Easter, as a side salad, and tripple the recipe to make sure there's enough for all, but I'll be loving any leftovers. Husband and I and both kids liked this very much, and that's saying something being that I have a child with autism who is quite picky! It would make a great summer salad, and it's nice to find something summery that is an alternative to a salad that contains mayo. Could take this along on a picnic, without worrying that the mayo would go bad. With the ham, I bought it already cubed in small bits, as Walmart sells it already finely diced in a 16 oz. package. Fabulous!

Tammy's Irish Stew

This is a new St. Patty's day favorite for us. I used ground lamb instead of beef, and substituted celery for parsnip. I also added fresh chopped parsley and fresh chopped rosemary. It was still a bit bland, but that can be fixed with a few extra spices, and my kids actually prefer it more on the bland side. I will be making this again! :-) I might try adding garlic next time.

Cute Egg Chicks

These turned out really cute. However, cutting the zig zags and getting the yolks out without breaking the egg whites was not easy, and was much more time consuming than most deviled egg recipes. Everybody oooohed and aaahed at Easter over how cute they were.

Poached Fish with Cucumbers

We tried this recipe... it sounded good, but it didn't go over well with my family. We ended up with way too much sauce, and the mix of flavors just didn't seem to blend right for us. It was okay, but not spectacular, so unless you really like ALL of the ingredients, you might want to be cautious with this one.
