Fresh Ginger Cookies

These were amazing! I followed the recipe exactly except that I didn't have molasses so I substituted some brown sugar and a little maple syrup. On the sugar coating outside, I used a coarse grain sugar mixed with a pinch of cinnamon, nutmeg, and dried orange peel. It didn't take nearly a cup of sugar to coat the cookies. Highly recommended recipe!

Healthy Banana Cookies

I think these were great, but took off one star because they could use a little more spice. I added cinnamon, nutmeg, and a tad of ginger. Also added raisins, wheat germ, flax seed, and chopped walnuts. And to make it healthier, as other reviewers added, use applesauce instead of oil--worked perfectly. Overall they are a great tasting cookie and a really healthy alternative.

Curried Butternut Squash and Pear Soup

Delicious soup! I would agree with other reviewers to use coconut milk instead of half and half. The sweetness of the coconut adds more dimension to the flavors.

Mom's Zucchini Bread

As with other reviewers, I made some minor substitutions. Used 1 cup wheat and 2 cups white flour. Used probably closer to 3 cups shredded zucchini. And used 1/3 c olive oil and 2/3 c unsweetened applesauce. Sprinkled a few chocolate chips in there for good measure. The bread came out super moist and delicious. Instead of a second loaf, I made muffins and took them out after about 25 minutes while the loaf continued to bake. Both are delicious, moist, and flavorful!!

Lentil Soup III

Awesome tasting and simple. I forgot to cover the soup and it took significantly longer to cook (in addition to needing water added), so remember to cover it!
