Easy Vegetable Pot Pie

my hubby is the pickiest eater in the world (he's also a vegetarian) and he loved this. asked me to make again, which never happens. so easy too! i used creamed corn instead of milk and frozen veggies instead of canned. thanks so much!

Sweet Potato Enchiladas

totally delish. the spices definitely need to be doubled. and i had so much filling left over that i made 4 extra and froze them (before baking, but after enchilada sauce and cheese). this is a great, healthy vegetarian main course that will stay in our rotation. thanks so much!!

Slow Cooker Macaroni and Cheese I

This is a really great recipe. I love that you do not have to cook the noodles before hand. However, I used the full pound of pasta. Had I only used half, as the recipe stated, it would have been WAY, WAY, WAY too cheesy. I actually perfer to use the entire box, so it works great for me. Thanks so much for the recipe!

Best Marinara Sauce Yet

Trusted the other reviews and made a triple batch of this to freeze. It is AMAZING!! I'm so glad to have this recipe. I used dried parsley instead of fresh (cut the amount in half) and diced the onion in the food processor so i didn't have to chop. Massive 5 stars!!

Pumpkin Pancakes

Made 3 or 4 batches of these at one time (48 pancakes) and froze them in ziplock bags - 4 each. I keep one bag in the fridge and heat up 2 a day in the toaster for my daughter who LOOOVES these. They are delish. Thank you for the recipe!

Vegetarian Chickpea Sandwich Filling

With the exception of using vegan mayo (nayonaise), I followed the recipe exactly. I let it sit in the fridge for an hour and it was fantastic. Next time I'll double. Thank you for this great recipe that my whole family loves!

Corn Spoon Bread

Just made this tonight. I used 2 eggs instead of eggbeaters , but that's the only change. My crockpot cooks SUPER hot so it got burned on the outside before it cooked all the way thru, and honestly, it was still delish. Next time i'll try it in the oven. my hubby wants me make it again asap!

Overnight French Toast II

I've made this a few times. A couple with french bread and a couple w/ a loaf of cinnamon bread. Personally, I liked it better w/ french, but hubby likes it w/ the cinnamon. It's a great recipe. Making again this weekend for family coming in.

Slow Cooker Ham

This was phenomenal! However "you might have to trim it a little to make it fit" was an utter understatement. I didn't want use foil over the top so i just kept hacking till it would all fit. My slow cooker cooks really hot, so i turned it to "warm" an hour early. PERFECTION!! i did baste it about 3 times. not sure if it really made a diff or not. making again this weekend for family in town! thanks!

Fire-Roasted Tomato and Spinach Pasta

this was fabulous!! i added a little more garlic, some oregano, basil, and onion powder. it probably would have been just as good without the additions though. next time i think i might add some capers. but the recipe, as-is, is great. will be making weekly!!

This is FAB! i use soy crumbles instead of meat since we are vegetarian, and i added about a tablespoon of bbq sauce. I make this about 1ce a week because we are always craving it!

Artichoke Spinach Lasagna

FANTASTIC. I made this for Christmas (it's red and green!) and I was asked by 3 people for the recipe. I made it the night before and put in the fridge. Took out about 1 hour before cooking. Delish! I only used about 1/4 to 1/2 cup veggie broth.

Sweet Pasta Salad

i loved it. i followed others advice and halved the ingredients except for pasta and it wasn't nearly as sweet as i would have liked so i think i would have thought it was perfect the way it was intended. but even halved it was wonderful. made it for easter and everyone loved it. got many compliments as everyone went for 2nds. thank you!

The Best Vegetarian Chili in the World

definatly a keeper. i cooked in the crock pot as well (3 hours on low then 1 hour on high w/ half can of water). the only thing i changed was a can of diced tomatoes for 3 fresh ones, and only 1 jalepeno pepper instead of 2. it was GREAT! will be making again next week. thanks for this recipe!

Sugar Coated Pecans

great recipe and very easy. i actually subbed regular sugar for brown sugar and mixed it in w/ cooked carrots for thanksgiving dinner. it was awesome. they are also great alone just to snack on. thanks!
