Farmer's Market Vegetarian Quesadillas

One Bowl Brownies

Just tried this recipe except I cut it in half, reduced the sugar and used whole wheat flour. I used 2 oz (half a bar) of unsweetened chocolate, 6 TBL butter, 3/4 cup sugar, 1 tsp vanilla, 1 egg, and 1/2 cup of King Arthur white whole wheat flour (omitted walnuts b/c I didn't have any). Baked it in an 8" square pan for about 18 min. They were only about a 1/2" thick but I thought they turned out well. Not spectacular but definitely satisfied my chocolate craving.

Mushroom Blue Cheese Turkey Burgers

Overall a good recipe. Worked better by sautéing veggies a little first and adding cheese directly to mixture. Also added a 1/2 cup bell pepper and 1 cup of grated carrots. My fam didn't like the blue cheese so next time I'll use feta or sharp cheddar.

Exquisite Pizza Sauce

Tried this last night and it was excellent. I didn't have oregano, marjoram or basil so I subbed 3/4 tsp of italian seasoning which includes all of those items. I did not add anchovy paste and only used about a teaspoon of honey. I ended up using about 1/4 tsp of salt which seemed perfect but because I loaded my pizza w/ tons of onions, mushrooms and peppers (which I didn't season) I found the salt lacking. So keep your toppings in mind and adjust accordingly. Thanks Angie!

Grilled Salmon I

Believe the hype. This recipe is fantastic. This was my first time making salmon and it was the best I've ever had. Didn't have lemon pepper so used fresh squeezed lemon juice and black pepper but otherwise followed recipe exactly. I also baked it for about 20 min at 400.

Superb Sauteed Mushrooms

I made this almost exactly as listed except I don't use wine and used portabella mushrooms. Also, my teriyaki sauce was very salty so I skipped the garlic salt and just added a second garlic clove. This was DIVINE! I ended up adding too much teriyaki sauce so I drained the liquid from the mushroom mixture and sauteed up some onions and a little broccoli in that liquid and then combined it all back together. And lo and behold, I had an amazing stir fry base. I mixed this with brown rice (that I made w/ frozen mixed vegetables) and this gave me a super hearty and fairly healthy meal. * The sodium content on my teriyaki sauce is pretty sad so I tried to add lots of veggies. Fantastic recipe, thanks so much!

Cream Cheese Frosting II

This recipe was excellent. It didn't specify the type of butter so I used unsalted and added a pinch of salt. I also sifted the powdered sugar first. The first time I made it, I accidentally used half the butter listed but otherwise followed the recipe exactly. The second time I made it, I used the correct amount of butter and found that I preferred it w/ less butter. I also thought this was pretty sweet so def. wouldn't add more sugar. I did need to refrigerate the frosting cause it got a little runny when warm. But it was simply divine on a red velvet cake. Highly recommended!

Simple White Cake

I'm giving this 4 stars b/c I made a substitution which apparently was a big mistake. Instead of a 1/2 cup of butter, I used 1/4 cup and 4 oz of applesauce. As I've substituted applesauce for oil in cakes before I didn't think this would be a problem but this cake was a huge disappointment. The top crust was like cornbread and the inside was like a thick gelatinous pudding that never seemed like it cooked all the way through even though I cooked it 40 min in a convection oven. I'll have to try this again following the instructions exactly but whatever you do, don't use applesauce.

Quinoa and Black Beans

I know people get annoyed when you review a recipe that you changed but sometimes you either don't have all the ingredients or have to make changes depending on dietary needs/preferences. Anyway, I followed the recipe for the most part. I didn't have veggie broth so used a half cup of salsa (as another reviewer suggested) and still the full amount of water. When I added the quinoa to the onions, I did saute them for a few minutes before adding the salsa and water. The only other modification was that instead of 2 cans of blackbeans, I did one of blackbeans and 1 can red kidney beans. Very tasty recipe and you HAVE to use fresh cilantro. It adds so much flavor. Thanks so much for the super healthy and tasty recipe.

Best Marinara Sauce Yet

This is such a great and forgiving recipe b/c it still comes out amazing even if you don't follow it 100%. I modified it based on what I had at home. I used crushed tomatoes instead of stewed and used 3 gloves of garlic. I didn't have fresh parsley so added about 1 tsp of italian seasoning and then more dried oregano, basil and thyme. I also don't use wine so just replaced it w/ water. Was a bit acidic so added at least one Tbsp brown sugar as others suggested and toward the end, I added some shredded parmesan and mozarella. Whole thing took about 45 min and YES, it does get better the next day. My brother said it was the best pasta sauce he'd ever had. Definitely not using store bought anymore. Thank you Jackie!

Chicken and Broccoli Braid

This is a great recipe but as I'm a vegetarian I modified as follows: First off, no chicken and no almonds. I used at least 3 cups of brocolli, 1 1/2 onions and 1/2 of a yellow, red and orange bell pepper, 1 jalapeno pepper, seeded and chopped, 3 cloves of garlic, 1/2 tsp dried dill weed (2 tsp is way too much for me). I sauteed the onions for several minutes, then added the garlic and peppers. After a few more minutes, I added the chopped broccoli, salt, oregano, red pepper flakes, dill weed and onion flakes (they really added good flavor). I let that sit on the heat for about 3 minutes. Then I turned off the heat but covered the mixture so that the steam could continue to cook the broccoli. Once I the mixture cooled, I added the cheese and mayo. i just eyeballed it but I know I used less than a 1/2 cup of mayo because the mixture is already moist from satueeing the veggies. I HIGHLY recommend sauteeing the veggies! Lastly, I parted the mixture into sections and this got me 4 braids worth. I used one roll for each braid (I'm not clear from the recipe if they combined the 2 rolls to make a big one). I rolled out each sheet to make it thinner, then placed the mixture down the center, then cut the strips to braid it. I brushed them with the egg white and cooked them at 300 degrees for about 25 minutes (rotating the tray once in b/t) then another 15-20 minutes on 350 degrees. I know I modified it to suit me but still a great recipe as is. Thanks Kelly!
