Chicken and Spinach Alfredo Lasagna

5 stars for a unique lasagna. I added sun dried tomatoes and shitake mushrooms to the chicken mixture as others suggested. I made the lasagna the morning of a party and kept it in the fridge until about 4 pm. I added 30 minutes cooking time because I was putting it in the oven cold. I took another reviewer’s advice and let it sit for 30 minutes after removing from the oven. It was wonderful - everyone loved it. I also really liked the fact that I was able to enjoy visiting with my guests as all the prep was done in advance. Have your guests bring a salad, bread, and wine and you are set for an easy dinner! This easily fed 6 adults and 2 toddlers with left-overs for days.

Tiramisu II

Soooooo rich but sooooo good! I made it exactly as described in the recipe. I had trouble finding ladyfingers but finally found them by speaking to the bakery - they were kept frozen behind the counter. I did also read online that pound cake or angel food cake would also do well. Ladyfingers felt like the consistency of angel food cake and I think I’ll sub that for actual ladyfingers next time. Also, the mascarpone cheese was rather expensive and I went to 2 different grocery stores looking for it! I should have called first. In retrospect, the mascarpone filling is extremely rich so I plan on halving the recipe for the filling component which will make it a) cheaper and b) more edible (did I mention how rich this dessert is?) Using angel food cake I’m going to double the amount of “ladyfingers.” Definitely double the coffee/rum mixture as suggested by others. I’m also going to layer these in wine glasses and chill overnight for little individual desserts. There are some great presentation ideas online.

Spicy Shrimp and Grits

Not the creamy shrimp and grits I expected - mine came out with a bit of a Mexican flair (I used a can of Rotel so it is my fault), but excellent none the less! Would work well for company.

Asian Salad

Great ‘Asian Salad’! I followed others advice - I think I collected all the positive changes: - rice vinegar instead of white vinegar - brown sugar instead of white - pre-made coleslaw mix - toasted all crunches without butter in oven at 300 - used ‘Asain’ Ramen and added a teaspoon of the packaged seasoning mix - added a chopped green pepper - used slightly less than 2/3 cup olive oil (olive instead of vegetable and less oil than called for) - Refrigerated salad dressing for about an hour, shake to remix before tossing - kept crunchies separate until just before serving - toss and serve immediately Delicious! Will probably become my staple salad to bring for get togethers.

Country Apple Dumplings

I made it exactly as the recipe called for and it was perfect. I’m amazed at how easy and tasty it is! Keep stirring the butter and sugar until it begins to look “foamy” and all one syrupy consistency. It will then drizzle nicely over the dumplings.

Loved it! I added 1/2 tspn vanilla as another reviewer suggested. There was definitely enough crust. I can't wait to make it again - I just need some more blackberries!

Balsamic Chicken

Really enjoyed this and my 14 month old son ate the chicken too! The reduction is sweet, which we both liked but didn’t expect. I followed other user’s advice and used high quality balsamic and a good olive oil. I also doubled the marinade recipe for 6 chicken breast halves. I will most certainly make this again but when I do I’m planning on reducing the marinade WHILE I cook the chicken in a separate sauce pan - with double the sauce it took quite a while to reduce.

Slow Cooker Chicken and Dumplings

I’d been looking for a dumpling recipe where the dumplings actually came out thick and doughy - not like a biscuit. I was so pleased with this recipe because it came out just like I wanted. I did not add anything like peas. Where I grew up ‘Chicken n Dumplins’ is just that - chicken and dumplings. Adding veggies and making the biscuits fluffier just turns it into Chicken Pot Pie...which is not what I personally was looking for.

Grandma's Green Bean Casserole
