Baked Oatmeal II

This is my go-to baked oatmeal recipe! I make just a few changes: cut sugar in half, substitute applesauce for the melted butter, and add 1/4 cup flaxseed and/or wheat germ. I've never used dried cranberries (I'm thinking this means craisins?) because I don't think I'd like the texture. So we use blueberries (just throw a handful of frozen ones in from the freezer!) or chopped apples (I sautee them in a bit of butter and cinnamon for about 10 minutes to soften while I mix together the other ingredients).

Oatmeal Pancakes

I thought they were good, but my husband did not like them at all. My kids (toddler and preschooler) did not like them much either. The only thing I deviated from the recipe on was using regular milk instead of buttermilk.

Artichoke Rice Salad

I was excited to make this recipe because of the great reviews, but I am sad to say that I really didn't like it and nobody else did either. The flavors didn't seem to go together very well. I took it to a potluck and came home with over half of it left; tried to give the rest to my parents but they didn't want it either! The only changes I made were halving the mayo (as so many reviewers suggested) and leaving out the green onions as I didn't realize I was out of them. But I doubt that was enough to change the recipe too much. Oh well, live and learn.

Ham and Pineapple Dinner

I was really excited to try this one, but am slightly disappointed. It was decent, but not nearly as good as I had hoped. Definitely could taste the vinegar, which I did not like, and I actually thought it could have used a tad more brown sugar. It was wasn't awesome tasting like it had sounded. But very easy to make.

Blueberry Crisp II

Absolutely heavenly! I made it following the instructions exactly and everyone LOVED it. Made it again the next week, doing half brown sugar and half white as some of the reviewers suggested but I preferred it the original way. So scrumptious and easy! Although my husband was semi-grossed out when I told him after he ate it that it contained mayo. :)
