Abbey's White Chocolate Latte

This was really good. I changed the serving size to 1. I used organic 0% milk and half&half in place of the heavy cream. I used 1 teaspoon of sugar (plenty sweet since the white chocolate is already sweet), and brewed regular coffee (hopefully I can find some espresso K cups!). I combined everything in a sauce pan (except coffee) and let it melt/combine. Then I poured it in my coffee cup with the coffee. So easy, and really good!

Zucchini Patties

I found these to be really delicious. I grated 4 small, thin zucchini's and added some salt and just tried to squeeze as much water out as possible by hand. Instead of all the flour, I used 2 tbsp flour and 1/3 cup italian bread crumbs. I also added 2 small garlic gloves. Other than that, I followed the rest of the recipe the same. I don't know if it was because of the changes I made (which I got from previous reviewers), but the patties ended up tasting like omelets lol. They were really, really good, I just did not expect to taste so much of the egg. But I don't mind! I will definitely make these again!

Simple Spiced Rice

This rice is fantastic! Possibly my favorite way to prepare basmati rice as a stand alone side dish. I did not change a thing, perfect as is. Thank you kbarnett!

White Chili with Ground Turkey

This was so good! My husband thought it was unique and really flavorful. I used ground chicken (it's all I could find at the store). I scaled the recipe to 6 servings. I halved the cinnamon amount, and it was the perfect amount. I ended up using 2 cups of chicken broth, and thickened it up with corn starch, and it worked out great...not soupy at all. I used 2 cans of beans, and did not mash any, just didn't fee like it at the time :). And, I had no Monterey Jack cheese, so I just used parmesan instead, but only sprinkled it on the chili and mixed, it definitely was not 2 cups. Overall, excellent recipe and I recommend it.

Lentils and Rice with Fried Onions (Mujadarrah)

This was so good! I followed the recipe almost exactly. I used 3 medium onions, and it took me the entire time of cooking the lentils/rice for the onions to really brown, but it was worth it. I used basmati rice, and added 1 tbsp cumin and a pinch of cinnamon. Topped with some plain yogurt! Very simple, but really tasty. I recommend this!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

Everybody at work absolutely loved these cupcakes! They all thought I was a pro, but really I am not that experienced :). That goes to show how easy these are to make, and how good they turn out even if you are not very experienced! I cut the icing in half per other reviewers just so I would not have too much left over. The batter made about 16 cupcakes for me. I only changed two things: used half applesauce and half oil (I have seen that a lot in other recipes and thought I would try it, the cupcakes were really moist), and I forgot to buy baking soda, so I used baking powder, and doubled the amount written and omitted the salt (some website said this is the closest to getting to baking soda), and it still turned out just fine. I recommend this!

Super-Delicious Zuppa Toscana

I just finished up my last bowl of this soup, and it was so good! I didn't follow the recipe exactly, but pretty much most of it. I accidentally bought sweet turkey sausage, and it still tasted really good (I did add the pepper flakes to make it spicier). I also didn't have 5 cans of chicken broth, but I had enough for 48 oz and it was a perfect amount for me. I added 1 teaspoon of fennel and 1/4 bunch kale per other reviewers suggestions-made this soup amazing. I had jumbo russet potatoes, so I only added 2 (washed and peeled) and that was check the size of your potatoes beforehand. My husband loved this, he was impressed :) Thank you!
