Greek Orzo Salad

Used a little bit of artichoke marinade, plus olive oil, more lemon juice, and some red wine for the dressing. Very nice, not oily, and my partner who's not a huge fan of artichokes liked it.

Easy Polenta with Tomato Sauce

We used 1.5 cups of milk and chicken stock, and let it sit for a few minutes after baking, and it was nice and thick. Also from previous reviews, added a clove of minced garlic to the spaghetti sauce, which added a nice kick.

Easy Batter Fruit Cobbler

Pretty easy, and marvelous! I doubled all of the ingredients, except for the fruit, which I tripled, and I used a 9x13 pan. I used frozen cherries, blueberries, and raspberries. I also added 1 tsp of vanilla and 2 tsp of cinnamon to the batter, based on other reviews. It ended up taking about 65 minutes to be done, but it was fantastic!

Mom's Sweet Potato Bake

Very yummy, got 5 stars from all of my guests! I followed the suggestions of other reviewers and only used ~1/4 cup of white sugar, and added a little bit extra vanilla. I also only used 2 eggs, since that was all I had on-hand, and it seemed to work fine. I'm not a huge fan of nuts, so I substituted oats for the pecans and it worked out nicely. Definitely a great recipe!

Chocolate Chocolate Chip Nut Muffins

I made them basically as written, just without the nuts (I'm not generally a fan). Very yummy! The only downside is that they're very sticky, so even with paper liners they were hard to get out of the pan.

To Die For Blueberry Muffins

These were quite tasty! I used the splash of vanilla that others recommended, and about 1 cup of frozen blueberries and 1/4 cup of dried blueberries (I happened to have them on-hand). The contrast between the berries was nice. I like average-sized muffins, so it made about 16.

Sesame Green Beans

This was quite good. I took it to a potluck and there wasn't any to take home! I did take the advice of other reviewers and slightly modified the recipe. I used about 1 tsp of sesame oil in a non-stick pan, and added 2 cloves of minced garlic with the sesame seeds. I also used frozen green beans instead of fresh (that's what I had on hand), and it worked fine (though I only cooked them for about 6 minutes).

Roasted Acorn Squash

I made this for a potluck, for a woman who wanted a savory squash dish instead of the usual sweet type. Didn't have coriander on hand, so I used a bit more onion, garlic and nutmeg. It turned out *quite* well, I got multiple compliments and not a bit was left over!

Black Bean and Salsa Soup

We really enjoyed this on a hot night when no one wanted to cook! I had run out of cumin, so I substituted oregano, garlic powder and onion powder. I also added leftover corn and brown rice, and it turned out marvelous! With tortilla chips broken into it, it was quite enough as a dinner on its own.

Black Bean and Corn Salad I

I took this to a potluck, and it was a big hit! I used balsamic vinegar instead of dressing and left out the cilantro (which I detest), and it was very good without being greasy.

Amby Rae's Cucumber Salad

This was very easy and pretty good. I only had fat-free sour cream around (and no mint), and it turned out quite well. It was a bit runny for my taste, so I think slightly less sour cream/yogurt would be better. Also, it tastes *really* good with anything curry!
