Easy Pumpkin Muffins

I have to give these muffins a 5 just because they are so ridiculously easy to make! Sure, I've had better pumpkin muffins--but given the minimal time investment, these are well worth making. I usually throw in a handful of dried cranberries and maybe some chopped pecans, just because they go so well with pumpkin. I almost always do some type of glaze for my muffins, and for these I make one with powdered sugar & bourbon. My family is pretty particular about the quality of the baked goods they'll eat & I've been asked to make this several times.

Chocolate Toffee Cookies II

These cookies are amazing! I substituted brown sugar for half of the white sugar because I wanted a slightly softer cookie, otherwise I followed the recipe exactly as written. They are delicious!

Asian Coleslaw

This is a wonderful salad to serve along with any type of oriental dish. I changed the proportions of cabbage slightly because I really like napa cabbage. I also threw in a package of crumbled uncooked ramen noodles (threw away the seasoning packet) and some ground peanuts--I just wanted a little extra crunch in my salad. I was a little short of garlic so I added some chili garlic paste to the dressing. That also made it a little spicier, which is what my husband really likes. I served this to my son's high school football team along with the Perfect Sesame Chicken from this site and the boys raved!

Perfect Sesame Chicken

I have made this many times and it is my family's favorite all-time dish. In fact, I hosted my son's high school football team for dinner & this is what my son requested I prepare--26 boys ate 14 lbs of chicken! I always make the full recipe of sauce and I always have some left over--it's a good thing to have in the freezer, in a pinch you can mix it with some frozen chicken nuggets for a quick meal. I don't do anything different, the dish is perfect as is and needs no tweaking.

Green Chile Spinach Quiche

I did change the recipe very slightly because I had to use up some leeks & chard from my garden, but it turned out delicious and I felt the need to pass along a positive rating. First, I cooked some chopped bacon (because I add bacon to almost everything). Then I cooked some thinly sliced leeks in about a teaspoon of the bacon grease and used those instead of the green chilies. I melted the buttter in the pan and wilted some fresh swiss chard in it, then used that in place of the spinach. I kept everything else the same, and the quiche was absolutely delicious. It wasn't quite as creamy as traditional quiche--it was a little more "firm"-- but considering that the egg/cottage cheese/less cheese combo makes it healthier it was fabulous!
