Fish Chowder

Great soup! Made generally as is except for the following: added kernels of 2 ears of fresh corn, brancy to deglaze the sauteed vegetables and I used two cups of half and half instead the evaporated milk.

Fra Diavolo Sauce With Pasta

Yum! It was scallop season here in Florida so I turned to this recipe to cook up my husband's catch and it did not disappoint. I made the recipe mostly as is but used my stick blender to crush the tomatoes and added a little brandy to deglaze the pan where the onions and garlic were sauteed. Thanks!

Blueberry Pie

Great pie! I made it twice two days in a row! I followed the recipe as is except for the following minor additions: (1) I added the zest of one lemon and the juice of half a lemon, I also added 1/4 teaspoon vanilla and (2) I egg-washed the lattice crust. My pie set perfectly fine with 3 tablespoons of cornstarch, I would not recommend adding more. I cooled it to slightly warmer than room temperature and it was perfect!

Angel Hair with Feta and Sun-Dried Tomatoes

So quick, so easy, so good. I chopped everything while the water boiled and pasta cooked. Subbed fresh basil for cilantro, used plain reduced fat feta. Added crushed red pepper (I like spice), salt, black pepper. Will try it with a squirt of lemon and artichoke hearts and bow tie pasta like some reviewers, but great recipe as is. Hubby asked to add it to the rotation.

Tzatziki Sauce I

YUM if you love garlic. I tripled the recipe and have been eating cucumber slices with tzatziki instead of chips and dip. I also marinated chicken with it. And did a salad with cucumbers, feta, tomatoes, a few tablespoons of italian dressing and a few table spoons of tzatiziki. Used on burgers instead of mayo. Very versatile sauce!!

Italian Chicken and Chickpeas

Ok, I like spicy food. Actually, I LOVE spicy food, but THIS WAS WAAAAY TOO SPICY! I made the recipe exactly (added salt). I liked the tomato/chicken/garbanzo combo but won't make this again.

Refried Beans Without the Refry

Really great. As good as it gets for being fat-free. So much better than the canned. I added the whole jalepeno (with seeds) and did not think it was too spicy. After straining I mixed it with my stick blender right in the crock pot. I blended after only 6 hours on high and it was fine (Next time I will do the full 8 hours, but it was dinner time and we were ready). It makes a lot so I will freeze the rest. This would be great for a seven layer dip. Thanks!

Holiday Chicken Salad

My first five-star review! Make this as is and you will not be disappointed. Use good quality mayo and be sure to let it sit overnight. At first it may not seem like enough mayo - but it is. Once it sets, it is perfect. The first time I made this I kept the chicken chunks on the bigger side, the second time I cut/shred the chicken more - I prefer the smaller pieces of chicken. Also, I read some reviews where they lessened the amount of cranberries - don't do this on your first try. I think the cranberries make this! Thanks!!!
