Cabbage Roll Casserole

Tastes amazingly like the golabki my grandmother used to make. I added two cloves chopped garlic to the meat when it was browning, only a 2 pound head of cabbage, and only 1 1/2 cans of broth. I suggest onion flavored broth if not using homemade. Also, if your tomato sauce has no salt in it, add 1/2 teaspoon additional salt.

Pickled Red Beet Eggs

Although this tasted fine, there is not enough liquid in the recipe to cover both the eggs and the beets. I had to stir often, and did not get the uniform color I expected.

Armadillo Eggs

This is a great recipe, but I'd suggest using fairly small jalapenos. The ones I bought were fairly large, and the coating just didn't cover the peppers. (Despite the size, I used significantly less than a pound of Monterrey Jack cheese....)
