Grilled Vegetables with Balsamic Vinegar

Great recipe as is. Have also made modifications that I think made it tastier - simply adding a tablespoon of sugar and a bit of garlic &/or onion powder, but great with or without changes.

Pork Tenderloin with Creamy Herb Sauce

Simple and delicious. Can be adapted to your own tastes. First time I made it, I made it with fried onions & peppers in place of the carrots, doubled the sauce ingredients, & made a huge mistake as SOMEONE removed the dried parsley from my container and substituted hot peppers dried from the garden. Thank goodness I noticed before I shook in 1 tablespoon of hot pepper, but it was still great. Have also made with 1/2 heavy cream & 1/2 of half 'n half for a richer sauce to go with pasta. Awesome. Great recipe...easy to tweak.

Chewy Cocoa Brownies

Great, normal recipe for chewy, tasty brownies. No weird or expensive ingredients. Like your grandmother would make. Made this as a base for brownies I shaped like Christmas trees, then topped with green icing and crushed candy canes. Stuck a 1 1/2" candy cane piece at the base for the trunk. Looked and tasted great. Searched loads of recipes on this site, and this was the one I chose...thank goodness. Simple and great.

Brownies To Die For

Made according to the directions without the added chips and pecan topping....fabulous. Made it in a 9x13 pan with a mocha chocolate brownie mix & baked for 32 minutes...perfect. Unbelievably moist and delicious. Can't imagine how rich it would be with the topping. Loved it without it. Such an easy & delicious recipe. Will definitely become a constant favorite in this house.

Zucchini Cheddar Pancakes

Awesome recipe! I've also spiced it up too...To mix the egg, I put the 2 in the blender with the onion, 2 garlic cloves and a tablespoon or so of hot portugal peppers, blended, then added to the mix. Also added salt & pepper. Will definitely add more hot pepper next time, but it was great. Served them with sour cream mixed with garlic, salt & pepper. Great side dip. Will definitely make these again.

Busy Day Deer

Great, easy recipe, but it can be even easier. I did this in the crock pot (6-8 hrs. on low)too omitting the oil. For flavor I added 1 beef bouillion and 3/4 t. or so of winter savory, which helped bolster the flavor nicely. The meat was fall apart tender. To make the gravy, which there is alot of, just mix water and flour together til smooth and add to hot/boiling liquid. Great over mashed potatoes or egg noodles (my son hates mashed potatoes.) Thanks for a great easy keeper.

Spinach and Orzo Salad

Great base recipe....needs some modifications, since proportions are not adequate as is. Have made this with 1/4 of the ingredients, except needed the same amounts of onion, oil and vinegar. I actually premixed the dressing and have also used raspberry vinegar instead since I ran out of balsamic...both are good. I add some sugar too to the dressing. Also added some green pepper and goat cheese rather than feta. I preferred the goat cheese, but that is just my taste. Change all you want...still a good idea with different ingredients than most salads. Makes ALOT of salad, which is why unless I have a crowd I only use 1/4 or 1/2 a recipe, since I don't like the spinach too wilted. Arugula is my next additive when it's ready in the garden! Thanks!

Sauteed Carrots and Leeks

Sorry....thought this was just OK. I'm a vegetarian due to health reasons (not by choice) and thought it'd be great, but had to make many changes & probably won't make it again. Added much more liquid, sugar and cooked much longer. Actually I added more of every spice listed because it needed much more flavor. I chopped baby carrots, but they took quite a while to cook, hence the extra liquid. Overall, just oK. Much prefer the Dijon Carrots and other carrot recipes.

Vegetarian Mexican Inspired Stuffed Peppers

Excellent base recipe. Have made it as is, and great, but have also used it without the beans (try to reduce the protein due to kidney problems), and have also added corn, used homemade salsa instead of tomatoes, added jalapenos, and added toasted walnuts for crunch. All versions are good. My husband likes the peppers more cooked so if you don't like them crunchy, boil longer, use thinner skinned peppers, or bake much longer. Overall a definite keeper.

Extreme Banana Nut Bread 'EBNB'

GREAT RECIPE! Not the typical heavy banana bread. Perfect consistency, no matter what substitutions you use. Works good with 1/2 white & 1/2 brown sugar, oil and butter combos, and/or adding vanilla. I have made it as written and with modifications and always great. I always omit the nuts due to nut allergies in our family, but never a bad batch. I add a sprinkling of cinnamon sugar atop for a flavor touch to the crustiness. DON'T LISTEN TO THE COMPLAINERS THAT THERE IS TOO MUCH SUGAR! If you don't want sweet bread...don't make one! Pretty hard not to be sweet when it is a sweet bread with 2 cups of sugar. Duh!

Vegetable Dill Dip

Great easy recipe. My 4 year old helped make it and he loved it. We did make a few alterations...we also added 3 oz. or so of softened cream cheese, omitted the parsley since I had none, and added a little pepper and garlic powder. This recipe can be easily modified according to one's taste. We also added less mayo, since the combination should be more 2 to 1 on the sour cream/mayo ingredients. All and all, a good basic recipe.

Coconut Custard Pie IV

Much better tasting and general consistency than other pies just using milk. Best recipe I've found on this site for Coconut custard pie. You can always add more coconut if you like, but we found this to be just the right amount. Great pie.

Buttery Crunch Crust

Awesome, fast and easy. I made one crust as stated for a coconut custard pie, then one with roasted peanuts for a peanut butter pie. Awesome! Loved the crust as much as the pie. Do not however pre-bake if you are going to bake the filling. Leave it uncooked, fill then bake. Excellent.

Peanut Butter Pie XIII

Good creamy pie....the only thing I would do is add another 1/4 cup of sugar. Not quite the sweetness levell needed...the pie was very peanut buttery, but needed a bit more sugar. I don't like those that eat sweets then complain it's too sweet. It needs to TASTE right. Overall, good recipe that needs a minor adjustment.

Brussels Sprouts Gratin

Good recipe...simple with minimal ingredients. If you have nice small brussel sprouts, that is the key to your dish. Larger ones are bitter. Cooking method is good. Made for thanksgiving and everyone who liked brussel sprouts liked it. The only thing missing was the need for more butter. I doubled the recipe as I had tons of fresh garden brussel sprouts, but there needs to be much more butter to enhance the flavor. That's really the only missing element...otherwise there is no butter. I'd put 1/4 cup or so atop or mixed in with the cream.

Raspberry Banana Bread

Fast, easy and awesome. To make it easier, I do the wet ingredients first, add the dry to it, then the raspberries and make a one bowl wonder. I have changed this with many alterations, but I ALWAYS add more raspberries. I've used milk or apple juice rather than water for better flavor and also add either a bit of pure vanilla or almond extract. Fabulous no matter how it's made.

The Cheese Thing

Excellent, fast and easy. I added some salsa to make it a bit more saucy, chunked the cheese and used a bit of Pepper Jack too, since we like more cheese and spicy foods...awesome. I'll be sending this recipe to my son in college who needs some easy recipes...this is a DEFINITE keeper.

Great way to use up cucumbers. I can't imagine reducing the crushed red pepper...wouldn't taste like anything. I only needed to add more salt. Good recipe.

Stuffed Zucchini I

Good, but needs much more liquid to make everything moister. Great taste, just way too dry. Add sauce, more butter...anything to increase liquid and it will be wonderful. Also, don't boil the zucchini, as others have mentionned. Unnecessary and too mushy.
