Home Made Farmer's Cheese

Good easy way to make cheese - turns out more like ricotta cheese. I didn't have a thermometer handy, so I guessed as to the temp and added the lemon juice but only got a small portion of the milk to curdle. I strained that out, and put the milk back on the stove to heat up again. The second time I added the lemon juice, the curdling happened instantly and it worked like a charm. You know you're done when the liquid is a clear yellowish color, and no longer white. Just make sure you have a couple big bowls and a good strainer. As another reviewer mentioned, fold your cheesecloth a couple times so the mesh is very small to get all the curds. The cheese was very bland, since I probably didn't put enough salt into the milk at the beginning, so I ended up adding a bunch of salt to the cheese afterwards, and that helped. Next time I will put more salt in the milk at the beginning stage. I used the cheese as a spread on top of bagels, then also for making lasagna. Both tasted very good!

Hearty Vegetable Lasagna

Very good lasagna recipe, but it seemed like there should be more veggies in the veggie lasagna, so I included a small chopped zucchini, spinach, and half of a red pepper. Instead of ricotta cheese, I used the cheese I made following the Farmers Cheese recipe on this site. The lasagna was very delicious and satisfying!

Green Grape Salad

This was a nice and light dessert/salad option, perfect for potlucks, grill-outs, etc. I think next time I'm going to cut the grapes in half: its a little difficult chasing the grapes around on your plate with a fork when they're whole, and I think cutting them in half will allow for a more balanced mix of grape and delicious whipped topping.

Delicious Raspberry Oatmeal Cookie Bars

Very easy to make, and tastes amazing every time! Made this for coworkers and cookouts several times, and I always get asked for the recipe. This recipe is very easy to adjust into a gluten-free recipe if substitute the regular flour with rice flour (or other gluten-free flour).

Grilled Delmonico Steaks

This marinade has single-handedly gave me a reputation of having the best grilled steaks EVER. This is my go-to recipe for grill marinades - it never fails. It is complex and very flavorful. I can't say enough about how great this marinade is - I even make up larger-than-needed batch so that I can use the extra for other meat dishes later on.

Mexican Sour Cream Rice

This was good, and the leftovers were also good heated up later. I wanted to add more substance to the recipe since this was my main dish for the meal, so like other reviewers, I added a can of black beans and a large can of corn. I didn't have green chilis, so instead, I added a can of drained Rotel (hot) - it gave it some kick!! This was very tasty, and the cilantro flavor really came through.

Lemon Snowflake Cookies

These cookies are a delicious and addictive treat! So lemony, soft, and perfect - everyone loves them. I've made them a few times now, and the I've found that using about half a container of cool whip is about right - too much more than that and it gets a lot harder to work with the dough because its too wet/sticky. Also, once mixed, put the dough in the refrigerator for about an hour (or freezer for shorter time) in order for it to stiffen up--this really helps make it easier to roll into small balls. I've made this with white cake mix and lemon pudding mix and I think it turns out perfect.

Zucchini and Ricotta Casserole

Really freaking tasty! I may add some parmesan to this next time, since that seems like a great addition. This is definitely a crowd-pleaser - even those who claim to not like zucchini will really enjoy this dish. This will definitely be on regular rotation!

Turkey Cocktail Meatballs with Orange Cranberry Glaze

Delicious!! It took a bit more time than I thought it would to pan-cook them, but maybe I was just going slow from being on unfamiliar turf. I used crushed Ritz-type crackers instead of breadcrumbs. Refrigerating the meat mix for a little while prior to rolling into balls did help with working with the meat. Well worth the effort though. A great party food!

Blackberry Cobbler II

DELICIOUS! I was looking for a recipe to use the mulberries from my yard, and this turned out perfect! So easy too! The dough was so tasty and was a perfect compliment to the berries. Next time, I'm going to make sure to have vanilla ice cream on hand to make it ala mode. This recipe is definitely going to make it into the Favorites folder.

Blackberry and Blueberry Pie

Got rave reviews when I made for a work-related bbq party! Despite having to substitute a few ingredients (not enough time to go to the grocery store) it tasted really good. Besides substituting strawberries for the blackberries, and butter for the shortening, I added a tablespoon of corn starch based on other reviewers. I can't wait to make this again!

Salmon with Brown Sugar and Bourbon Glaze

The sauce/glaze was way too heavy for my tastes - it overpowered everything. The sauce was very tasty with the rice, but we ended up enjoying the pieces of fish that had the least amount of sauce on them and the least saturated. I think if we make this again, we'll decrease the sauce, maybe thin it out, etc.

Maple Cajun Mahi Mahi

Incredibly fast and easy, with a delicious mix of flavors. I tend to like things with a bit of heat, so this was an excellent way to incorporate - hot, plus the sweet of the maple syrup made for tasty times in my mouth. If serving with rice, making a bit more of the sauce would be a good idea. I'll definitely be making this again!
