Home Made Farmer's Cheese

Good easy way to make cheese - turns out more like ricotta cheese. I didn't have a thermometer handy, so I guessed as to the temp and added the lemon juice but only got a small portion of the milk to curdle. I strained that out, and put the milk back on the stove to heat up again. The second time I added the lemon juice, the curdling happened instantly and it worked like a charm. You know you're done when the liquid is a clear yellowish color, and no longer white. Just make sure you have a couple big bowls and a good strainer. As another reviewer mentioned, fold your cheesecloth a couple times so the mesh is very small to get all the curds. The cheese was very bland, since I probably didn't put enough salt into the milk at the beginning, so I ended up adding a bunch of salt to the cheese afterwards, and that helped. Next time I will put more salt in the milk at the beginning stage. I used the cheese as a spread on top of bagels, then also for making lasagna. Both tasted very good!

Hearty Vegetable Lasagna

Very good lasagna recipe, but it seemed like there should be more veggies in the veggie lasagna, so I included a small chopped zucchini, spinach, and half of a red pepper. Instead of ricotta cheese, I used the cheese I made following the Farmers Cheese recipe on this site. The lasagna was very delicious and satisfying!

These are amazing cookies, always so incredibly tasty. These are definitely ones that get a lot of rotation. They are great to take to an event too because they look impressive and more taste good.

Smoked Steelhead Trout (Salmon)

The fish tasted outstanding! Definitely a keeper. We opted for two fillets totaling 3.25 lbs (they fit better in the small smoker, and we were cooking for a small group so wanted to make sure there was enough fish to go around) and used AllRecipes awesome serving adjuster to help figure out ingredient quantities needed. For us, the fish was finished earlier than expected - about 3 hrs of smoking time. My friend was in charge of the actual smoking and temperature-fiddling process with his recently acquired smoker, so I don't really know the exacts, but I do know that we followed the instructions and temps on the recipe closely.

Green Grape Salad

This was a nice and light dessert/salad option, perfect for potlucks, grill-outs, etc. I think next time I'm going to cut the grapes in half: its a little difficult chasing the grapes around on your plate with a fork when they're whole, and I think cutting them in half will allow for a more balanced mix of grape and delicious whipped topping.

Delicious Raspberry Oatmeal Cookie Bars

Very easy to make, and tastes amazing every time! Made this for coworkers and cookouts several times, and I always get asked for the recipe. This recipe is very easy to adjust into a gluten-free recipe if substitute the regular flour with rice flour (or other gluten-free flour).

Lemon Snowflake Cookies

These cookies are a delicious and addictive treat! So lemony, soft, and perfect - everyone loves them. I've made them a few times now, and the I've found that using about half a container of cool whip is about right - too much more than that and it gets a lot harder to work with the dough because its too wet/sticky. Also, once mixed, put the dough in the refrigerator for about an hour (or freezer for shorter time) in order for it to stiffen up--this really helps make it easier to roll into small balls. I've made this with white cake mix and lemon pudding mix and I think it turns out perfect.

Grilled Delmonico Steaks

This marinade has single-handedly gave me a reputation of having the best grilled steaks EVER. This is my go-to recipe for grill marinades - it never fails. It is complex and very flavorful. I can't say enough about how great this marinade is - I even make up larger-than-needed batch so that I can use the extra for other meat dishes later on.

Mexican Sour Cream Rice

This was good, and the leftovers were also good heated up later. I wanted to add more substance to the recipe since this was my main dish for the meal, so like other reviewers, I added a can of black beans and a large can of corn. I didn't have green chilis, so instead, I added a can of drained Rotel (hot) - it gave it some kick!! This was very tasty, and the cilantro flavor really came through.

Citrus Shortbread Cookies

The recipe was a flop. I followed the instructions, even putting the dough in the freezer to make sure it was indeed firm when handling to cut the cookies (thawed in frig overnight). The cookies ended up being one flat greasy, mess on the pan. The mono-piece that came out just crumbled apart and didn't taste good. I really wanted this to work out - it sounded like such a good idea - but it failed. I'm usually really good at baking, especially cookies, so I'm baffled.
