Herb-Glazed Roasted Turkey

I've tried several over the years; injection, rubs, lemon slices under the skin and several others. This has got to be one of the best "treatments" I've done. I also brined the turkey with the "Incredible Turkey Brine Recipe" also found on Allrecipes.com. This was one of the best turkeys I've ever prepared in over 30+ years.

Incredible Turkey Brine

I used this brine in conjunction with the Herb-Glazed Roasted Turkey, also on Allrecipes.com, so it's tough to say if the brine was totally successful in doing what it was supposed to accomplish. However, my turkey was moist and tasty, so I figure it probably did what it was supposed to do. A quick warning though.... "Ready in about 1 1/4 hours" is WAY off! I "set aside to cool completely".... In fact, it sat on my deck in 40 degree weather to cool down and after 4 hrs it was still close to 60 degrees. Not a temp to start brining a turkey! Make this WAY ahead of time and allow to cool. Don't wait until the last minute.

Cornbread Pancakes

My wife said it best, "With the cornbread taste, you didn't know whether to just put butter on them or if you should use some syrup." Overall, they are good. I like the cornbread taste. However, it's something I'd only do occasionally, like for company or for an option from regular pancakes.

Wiener Schnitzel

Without a doubt, worthy of 5 stars. And take the advice of others and use some lemon. I didn't have any fresh lemon so I used Lemon/Pepper spice. Awesome! The dw says it is a keeper. I used some boneless pork chops that I pounded out to the appropriate thickness. Great recipe to put in the rotation!

Good biscuits, but a little too much trouble for what they are. I used butter instead of shortening, still not the greatest I've had. Worthy of a solid 4 stars.

Honeyed Ham Glaze

Finally - a recipe worthy of 5 Stars! This glaze was the best I have ever come across! When my son, who isn't a big ham eater, goes back for 3rds and 4ths, you know it's more than the ham he likes! Quick, easy and full of flavor, this glaze is great!

Gumbo Style Chicken Creole

As written, this recipe is a solid 4 stars. With the modifications - celery instead of mushrooms, cayenne pepper and smoked sausage - this is 5 stars! Don't forget to add some Cajun seasoning, too. The wife went for seconds - that told me a lot right there!

Soy and Garlic Marinated Chicken

Another good solid 4 star recipe. I did do a little doctoring, as so many had; 1/4 cup oil, some Worchestershire (couple of tablespoons) and a packed tablespoon of brown sugar. Came out with really decent flavor. Not that grab you by the stomach a 5-star would do, but decent taste nonetheless.

Roasted Pork Loin

Another solid 4-star recipe. Roast came out tender... a lot more tender and juicy than any previous pork loin roast I have cooked. Had good taste, but the "rub" didn't go very far. I would double that next time.

A good solid 4-Star recipe. I think some refried beans in with the ground beef mixture would have really set it off, plus double the chili powder. It's a keeper!

Grandma's Peach French Toast

This was very good. I used 6 eggs instead of 5 and I used far more cinnamon than the recipe called for - which I'm glad I did. My son said it's a "Keeper", so it'll be a breakfast for special occasions. I think I'll double the syrup next time - that really set things off for the family.

Dessert Crepes

These are a solid 4 stars. Exactly what I was looking for and not too complicated to make. I added some Cinnamon, maybe a teaspoon or two, plus about 2/3rd teaspoon of vanilla extract - gave it some flavor. Filled the crepes with some fruit and spooned a light sauce over top - my wife thought she was at IHOP!

A SOLID 4-Star dish! Just one more tasty dish to add to your repertoire. Something to use as a change of pace and different taste. Let's face it, you don't use egg noodles every day and this gives you that alternative starch, instead of making the dumplings.

Classic Goulash

I liked it, but for some reason, it really tasted sweet. Next time, I'll cut the Italian seasoning in 1/2 and the Bay leaf to 1. I also thought it needed some pepper, so I was rather liberal with the black pepper grinder. Had no problem with the elbows being mushy and threw them in as directed.

Chuckwagon Stew

It was good - hard to tell what would make it a 5-Star meal. I browned the meat, like some reviewers suggested, and even tossed the stew meat in some McCormick Fiery 5 Pepper and used almost a full small bottle of Tangy & Sweet BBQ sauce after everything was in the crockpot. Meat was real tender, but the stew was lacking something. Maybe more of the Fiery 5 Pepper seasoning or maybe just a tablespoon or two of Cayenne - something to give it some kick. The wife said the recipe was a keeper, so, next time I'll try things just a little differently.
