So good! I added a can of drained chopped tomatoes w/chilies and skipped the can of chilies. I used a sweet onion and did not need any additional sugar. I also added some feta and avocado at the end. Served with some home baked torilla chips for a low fat high fiber treat. Great recipe for a crowd!

Portobello Mushroom Stroganoff

Just an FYI, while adding worcestershire may add flavor to this dish, it makes the recipe non-vegetarian. There are veg. worchestershire options out there but you have to look for them.

Lighter Fettuccini Alfredo

Wow way too much margerine. I doubled the recipe but left the margerine the same and still ended up having to skim about 1/2 cup of melted oil off the surface before the sauce would come together. On the plus side, once I did this the flavor was great! I poured the sauce over cheese ravioli and baked it until bubbly. I would make this recipe again with a lot less margerine.

Tofu and Cheese Stuffed Shells

Good filling. I turned this into a lasagana and used jar sauce. All the meat eaters loved it as much as me!

Ricotta Gnocchi

These turned out better than expected. I added some dried basil to the dough and froze the gnocchi after forming. They were a bit gummy after boiling but I just finished them off in the pan with a bit of olive oil and they turned out great! I did not add mozzeralla to the sauce to save on calories but did add a bit of fresh basil and parmesan, I also used light ricotta. The taste was restaurant quality.

Sweet Pasta Salad

After reading other reviews I omitted the cup of sugar and am glad I did. It would have been WAY too sweet with the sugar. I made half the dressing, it was plenty, and used fat free sweetened condensed milk and light mayo to reduce the calories. In addition I added two Tble of dijon mustard to balance the sweetness. You can add a lot of veggies to up the nutrient value of this dish.

Creamy Buttermilk Dressing

This dressing is delicious and super easy. I will never buy ranch dressing again. One note; this dressing is rather thick, I added extra buttermilk to make it pourable.
