Mulberry Muffins

Yummy! After reading some of the other reviews, I added 1/4 cup brown sugar, and instead of applesauce I used 1/2 cup of vanilla yogurt plus the 1/2 cup of sour cream. I used a full cup of mulberries and sprinkled the tops with cinnamon sugar before baking. I also just greased the muffin pan and didn't use muffin cups at all. My husband couldn't eat just one, so I had to make another batch (these were supposed to be for breakfast tomorrow!) I made 3 dozen tonight so I would use the mulberries that we picked, and I am planning on freezing some for later. Great muffin!

Giant Chocolate Chip Cookie

This was seriously the best cookie dough I have ever tasted! I did have to add a little over 1/2 a cup more flour, and just used a whole bag of chocolate chips, and it turned out great. I put it on a cookie sheet, my son wanted it football shaped so it didn't have to be round! It is the only big cookie I have ever gotten to turn out, and it was huge! He was happy, I was happy, and the whole sixth grade class was happy!

Honey Wheat Bread III

Yummy! My house smells so good! Made as directed, except I doubled the recipe, which made 3 loaves. I also added the honey to the yeast and subbed melted butter for the oil. Two of the loaves I left plain, and the third I rolled out and sprinkled with brown sugar and cinnamon and then rolled into a loaf for cinnamon swirl bread. I didn't have to add a whole lot of white flour in the end, turned out great! I had no problem with it rising- make sure your water isn't too hot, and that it gets creamy. Also, if your milk is too hot, it will kill the yeast. No hotter than 120 degrees is fine. Will be making this recipe a lot!

Pumpkin Bread IV

Oh so yummy! Changed this a tad. I used homemade pumpkin puree, so I decreased the liquids- 1 cup of melted butter instead of oil, and 4 eggs instead of 6. Plus, I used 2 cups of white sugar and 1 cup of brown sugar, and just under 2 TBSP of pumpkin pie spice instead of cinnamon, nutmeg, and cloves. Made muffins, my boys love them, even the one who hates pumpkin anything! Will be making again. And again!

Deviled Eggs

Made these for our Memorial Day picnic. I always make the eggs on Easter with my recipe, but decided to give this one a whirl. I added a little more vinegar and mustard than was called for to make it a little "zippier". Also added a little more mayo for creaminess. Made 18 eggs, and they ran out fast! Was told they were delicious, and everyone wished I had made more. Will keep that in mind for the 4th of July picnic!

Swedish Sticky Chocolate Cake (Kladdkaka)

Holy cow this was yummy! Made it on a whim one afternoon. It was so gooey and chocalatey, almost like brownies, and it didn't last long! As a bonus, made the house smell so good while it was baking. Will make it again and again!

Fresh Pear Pie

I made this pie because my little guy is allergic to apples. After taking it to a picnic and only getting one slice, I made another the next day. It didn't last long! My mom, who doesn't even like pears, has decided that I can just bring this pie to Thanksgiving instead of having apple. It tastes just the same. So yummy!

Easy Granola Bars

These are really good, although I am sure not much more healthy than oatmeal cookies! I baked them a bit longer so they weren't as chewy so my son could eat them without them sticking to his spacer in his mouth! had no problem getting them out of the pan warm or cool. We used chopped chocolate and white chocolate chips. My kids have been begging for me to make them again, they work great for lunch boxes, snacks in the car, and general munching!

Banana Pudding IV

This was soooo good. I made it one night to use up some bananas, and my kids begged for more. My sister-in-law was staying with us, and she has asked me to make it everytime she has come over. The only thing I did different was I didn't spread the cool whip over the top because some of my kids don't like it. I just added a dallop to individual servings. YUMMY!
