Kalamata Caviar

This dip was so easy. I garnished the serving tray with sliced roma tomatoes to add on the bread if desired. I will make this again and again. Wonderful with a nice Cabernet.

1-2-3 Vegetable Chili

Very easy! I added more veggies, carrots, yellow squash. I added a dash of red wine and let it simmer for an hour. Another good adjustment has been adding crumbled tempeh for a thicker chili.

Mediterranean Potato Salad

Very good. I used low-fat dressing and extra feta cheese. I let it sit overnight before I served it at a barbecue. Went over very well with the crowd.

Easy Mashed Potato and Roasted Vegetable Enchiladas

This recipe was simple and easy. I used flour tortillas instead of flour and they turned out great. I had a lot of the veggie mixture left over and I used it in my omlettes the next morning. I will definately make this again.

Fresh Vegetable Soup

This recipe was good, but I made a lot of alterations. I used all the fresh veggies I had on hand (celery, carrots, potatoes, etc. I also spiced it up quite a bit with an array or spices out of my cabinet along with some tabasco sauce. Otherwise, it would have been too bland.

Hot Bruschetta Dip

I've made this several times. I refridgerate the bruchetta for at least one day before serving. Works well with the brie, or as a traditional bruschetta appetizer.

Bella's Rosemary Red Potatoes

I made this as a side dish to Alaskan King Crab legs and it was a hit. My boyfriend claimed it was the best potato dish he has ever had. I doubled the rosemary, and added a tiny bit more at the end of cooking for added color.

Creamy Artichoke Pasta

Good recipe. Next time I will add more artichokes. I used rotini instead of spaghetti and it turned out great. Nice cold pasta salad the next day.
