Herb Roasted Pork
Wow, so good! I used red wine vinegar and my roast had a fat pad on it that I left on and up so as it cooked the fat would melt through the pork. The kids and I really liked this and the sauce was good over our rice too.

Hot Tamale Pie
Made this last night, WOW awesome!!! 2 boxes Jiffy cornbread mix (milk and eggs to make bread), 1 can mild rotel, taco seasoning, onion, small can corn, 1.5 - 2 lbs ground beef, 1 cup shredded cheese brown meat with diced onion drain if needed, add taco mix and drained Rotel simmer to cook off moisture. In a casserole (mine cooked over in a loaf pan I recommend using a larger casserole dish) spray with butter spray, mix one box of muffin mix pour into bottom of pan. Pour drained corn then 1/2 cheese on top og mix, top with meat mix. Mix 2nd box of muffin mix according to directions add the rest of the cheese -top meat mix leaving space at the edges for steam to escape. 350 for 50 minutes did it for my oven. We ate it with salsa over it. OMG it was so good and crazy easy.

Best Baked Chicken
We loved this chicken!!! I cut the breasts into strips so they would cook quickly, and were easy to portion out to kids. It is easy to make and reheats well.
