About this Cook
I have been married almost 29 years and have 2 sons aged 17 & 14. I like to be outdoors and since our summers are so short, we try to go hiking every weekend or visit friends on the farm. I love flowers, so my garden is a kaleidescope of color & variety, perennials being my personal favorites. I also love butterflies, so there are alot of butterfly favorites in the garden. This year we had an abundance of Monarchs & Swallowtails. My eldest son plays football, so from August to October our weekends are taken up with his games.
My favorite things to cook
Cheesecake, cheesecake & more cheesecake. I love cheesecake. I have become well known for them. I also love to experiment. Our boys will come home from school and I'll hear "oh oh, she's concocting again". There aren't very many leftovers in our house as they're transformed into something new the next day.

I don't really have any.
My cooking triumphs
The first time a pie crust turned out for me. Still working on that one though.
My cooking tragedies
When I had to make a trifle for a block party and the custard wouldn't set. It still tasted good, but watching the custard slosh around wasn't.

Ciabatta Bread
This was fast & easy using the bread machine. I have been looking for recipes using the bread machine to make the dough as i have arthritis in my wrists and all the mixing by hand made me stop making bread. We loved the taste & texture. I will definitely be making this recipe again. Had it tonight with lentil soup from this site as well, great meal on a cold winter's night.

Pumpkin Gingerbread
I took other reviewers advice and cut the sugar by 1/2 cup. Very good, got rave reviews from everyone who had it. My father-in-law declared it was "absolutely fantastic" and that says alot coming from him and he doesn't like pumpkin, that's why i didn't tell him it was in there until he had some. Thanks for the great recipe

Whipped Cream Cream Cheese Frosting
This is my favourite recipe for frosting. I make it exactly as the recipe states. I use it on everything, cakes, cinnamon buns (a fav), you name it. I have never had any problems with it being runny, i have had a few little lumps of cream cheese, but no one seemed to notice. As one reviewer said, whip the cream first and make sure its nice and stiff before you mix the cream cheese part, the oil from the cream cheese will affect the whipping cream if you do it the other way.
