Kentucky Bourbon Balls

I made these for my Kentucky Derby party last week. To say they were declicious is a gross understatement. Guests couldn't stop eating them. I made them too big, but I did get 30. I was nervous about the dipping, but it worked out fine. I had to stop midway and reheat the chocolate (I did this in the microwave) and cool down the balls, but they came out beautifully. I didn't add the extra pecan on top, but they still looked great. A real crowd pleaser!!

Fluffy Pancakes

I should have gone with my instincts and not added 1 Tablespoon of baking powder. 2 teaspoons would have been more than enough, I think. Fortunately, I knew enough not to add the salt.

Chef John's Flour Tortillas

Tried these this morning with poor results. I believe the problem is that the pan was too hot. I got lovely big bubbles, but they burned way before 1 minute. They came out like Naan bread, not tortillas. I tried cooking them for less time, flipping them several good. The last few I lowered the heat to Low, and they came out way better. They really need to be cooked on low heat and only until they're golden. I will try again.

Teriyaki Turkey Meatballs

I used Panko instead of the suggested crumbs, both in with the turkey mixture and outside. When I tasted the meatballs out of the oven I was not happy with the taste (very bland), but they looked good. I made the sauce, added the meatballs and let it sit in the fridge for 2 days. I slowly re-heated them on the stovetop. They were amazing!! Everyone raved and ate every last one! The flavor and texture were wonderful. The presentation with the pineapple slice was fantastic. This recipe is a keeper! You can make the meatballs in advance and freeze them. Then thaw in the fridge mixed with the cooled sauce and let them sit for a day or two.

Homemade Black Bean Veggie Burgers

Just tried this recipe with a few recommended adjustments ie: added 2 eggs and 1 cup bread crumbs. I also added cooked spinach, mushrooms and about 3/4 cup parmesean cheese. Absolutely fabulous!! I'm looking forward to trying this recipe with blue cheese. This is a real keeper!!

Pumpkin Fritters

this is an excellent appetizer recipe I did change it a bit: I added 2 t curry, cut the flour to 1/2 cup, added garlic salt, nutmeg and cinnamon. I tried them fried, but found the oil overwhelming the pumpkin. I fried them in a bit of butter and oil in a fry pan, like a blini (little pancake). I topped them with a dot of sour cream mixed with Major Grey chutney...awesome!!
