Chocolate Cobbler
For a last-minute dessert, this recipe is wonderful! It is so easy to make but tastes like it took some effort. And it is great for folks who can't have eggs. If you don't have self-rising flour, just google for a substitute of flour+baking powder+salt. I was concerned about how runny and not set the dessert looked when I pulled it out of the oven, but it thickened nicely after standing for about 10 minutes. I served it with vanilla ice cream and a Kahlua drizzle. Definitely will make again.

Slow-Cooker Chicken Tortilla Soup
I love this soup - make it all of the time. It is so easy - mostly just opening cans. It is great for a pot luck. Some changes: like someone else suggested, don't bother cooking chicken in advance. Just throw it in the crock pot. 1/2 hour or so before eating, shred up the chicken and throw back in. Instead of whole tomatoes, I use fire roasted diced tomatoes. Also, leave the cilantro out and serve as a garnish when eating. Otherwise, it turns brown and isn't fresh. I serve this with basmati rice, shredded cheese, lime wedges and sour cream. For a twist, throw in some black beans. If you want to make it with a kick, use hot enchilada sauce and diced jalapenos. If you make it mild, you can always spice up your bowl with a spoonful of habanero salsa. Love this recipe!

Frozen Chocolate Chip Cookie Dough Balls
Thought these were really yummy - only change was that they got much too hard in the freezer. I kept them in the fridge instead - still cold but didn't break your teeth. I skipped the walnuts and added extra chocolate chips. I let them set in the fridge until firm and then dipped them in melted chocolate.
