Pepperoni Meatza

My 18 year old son has been on a Low Carb diet and I have been trying to find recipes for him, but also want meals that my husband and I will also like. We really liked this recipe. After reading the reviews I cut down the salt content, used all other spices called for in recipe and also sprinkled some basil on the meat before going in the oven. I did choose to use the caraway seeds and I thought that it really added a very nice balance of flavor. I wasn't sure I would like them, but I did. My family and I enjoyed this recipe very much.

Armenian Rice Pilaf

I have made this recipe many times. My family and I really love this recipe. This recipe makes a whole lot of rice pilaf. Delicious recipe that I will continue to make over and over.

Fettuccine with Sweet Pepper-Cayenne Sauce

I didn't purposely alter the recipe because I wanted to, but I accidentally used the sour cream in another recipe and didn't have any on hand. So, I substituted a little less than half of an 8 oz block of cream cheese (cause that is all I had, lol). I also may have added more Parmesan cheese, cause we really like it, plus it helped me thicken the sauce. We really LOVED this recipe. I did add a touch of white wine too. I had some around and not much left so I thought what the heck. lol

Homemade Black Bean Veggie Burgers

I prepared the burgers by cutting up the onion, bell pepper and garlic with a knife. I also decided to cut up some mushrooms then I added all of the veggies to the mashed beans. Then, continued with the egg, and seasonings. I didn't have Thai chili sauce, and I am not crazy about hot sauce, but I did use some cayenne pepper. I cooked them in a skillet with olive oil and they turned out wonderful. They stayed together pretty well. I was very pleased. I will definitely be making them again.

Honey-Mustard Baked Chicken

I followed the recipe as written. I let it marinate for over a couple of nights. It turned out really good. My husband and son really enjoyed it. Thanks. It is likely to be a regular item in our house for dinner.
