Caesar Salad Supreme

I did not change a thing. Thought it was really good. I am use to the more traditional cesar salad with olive oil, coddled egg etc but this was a nice change. I also love anchovies, always have to eat a few right out of the can.

Miso-Glazed Skirt Steak

OMG is this to die for. I did not change a thing. So easy to fix and a wonderful flavor. I also did the cherry tomatoes on the grill like the video and served with sauteed spinach. I found Miso at HEB/Central Market. Any store that prepares sushi will have it for sale.

Chicken Breasts with Chipotle Green Onion Gravy

All I can say is WOW! We prefer dark meat so I actually used legs and thighs. With bones and skin on, it make more greese after frying so I used more flour and chicken broth. I also probably used at least a tablespoon of the Chipolte Chile Pepper. What an incredible taste. My husband said he loved it. I have never tasted anything that chef John has done and been dissapointed.

Chicken Breasts with Balsamic Vinegar and Garlic

Thought I made it per the recipe but discovered that I forgot the butter at the end. I only cooked one chicken breast and it fed my husband and myself with a small portion left over. Had a wonderful flavor and so easy to make. I am not a white meat person because of potential dryness but this was so moist. Will definately do this again.

Cheesy Baked Eggs

Chef John's Beef Goulash

I knew when I started browning the spices that this dish was going to be wonderful. I made it per the recipe except that I didn't have carraway seeds so I used cumin (googled substitute). What a great easy dish to fix. Glad I had a small portion left over so I can eat it again. Put it on top of egg noodles.

Italian Sausage Soup with Tortellini

I made this per the recipe except I did use canned tomatoes and dried basil. For the tortellini I used the bonnet kind stuffed with roasted garlic, it was awesome. Sent a batch to a sick neighbor and also to my parents. They called to see if I had anymore. By the way I doubled the recipe to have enough to go around. Easy to fix and a keeper for sure. MargieB

Shrimp with Tomatoes and Feta Cheese

I have to admit, I didn't go by the recipe exactly. After I sauteed the onions and garlic I also added some red, yellow and orange bell pepper to give it some color with the jalapenos. Being winter I didn‘t have any fresh herbs from my garden so I decided to use Italian Seasnoings to get me by. I also added cajun spices to the veggies as they cooked. I did cheat and used frozen cooked shrimp since I already had them on hand. Right before everything was done I did add a splash of heavy cream to thicken everything up and a couple of tablesppons of capers. I topped the dish with chopped cilantro and feta cheese and it was awesome. Hubby lived it and we both went back for seconds. Served over cajun yellow rice.
