About this Cook
I could barely make toast when I turned 18 years old and moved out of my family's home. However, I discovered a passion for cooking and it is my favorite hobby today. I started out as a recipe cook, and eventually started tweaking those into my own taste and style.

My favorite family cooking traditions
I grew up eating southern-style comfort food. However, that is not what I choose to cook these days, opting for healthier dinners. The one thing I have carried with me into adulthood is Tex-Mex. I grew up with it and still love it today. I make it at least once a week.

Carrot Rice
What a wonderful way to spice up the already delicious and fragrant basmati rice. My husband and I both love basmati rice already, but this was excellent. I put a bit too much cayenne in for him, but it is never too spicy for me. You can make it as spicy or mild as you want. I also added about 3/4 cup of chicken broth to the carrot mixture to moisten. Also, be sure to actually let the mixture steam completely for at least the 5 minutes to marry the flavors and soften the veggies. I am making this dish again for a dinner party this superbowl weekend. Thanks so much!!
