Turkey and Quinoa Meatloaf

Very delicious and easy to make just have to plan to begin prep a couple hours before you want to eat. I wanted to add more veggies to this to make it even healthier so I just threw a few handfuls of spinach (maybe a 1 1/2 cup packed) into the pan after sauteing the onions and before adding the garlic. The texture was perfect and did not fall apart from the addition of spinach.

Braised Collard Greens

This recipe is very easy to follow all you need is to start it with enough time before hand, I couldn't find the right kind of meat at my grocer so I substituted a smoked ham hock and didn't even defrost before adding it. It turned out wonderful and had great flavor plus it was really simple!
