Cranberry Pumpkin Muffins

I used about double the pumpkin, 1 1/3 cup sugar, whole grain spelt flour -- instead of all purpose flour, and only 1/4 cup oil, and thought that a 5 star muffin.

Thai Curry Chicken and Rice

Wow that was spicy! A bit too spicy for my husband, but I loved it. It would have been nice with more sauce, and seemed like there were too many bell peppers, so I think next time I will double the cream cheese and milk, and cut the bell peppers in half.

Chicken Brunch Bake

This was a good way to use up some leftover rotisserie chicken, although I think I'd use some chopped jalapenos instead of the pimentos for a bit of a kick next time.

Grain and Nut Whole Wheat Pancakes

The pancakes were good, but not nutty enough for me, so the second time I made them, I added 1/2 cup of chopped pecans instead of the walnuts and replaced the 1/4 oil with an extra 1/4 buttermilk, then they were great.

Mushroom Chicken Barley Risotto

I thought this tasted great. I did make one small change, i cubed the chicken and cooked it in a tsp of the olive oil, then added just 1 tbsp balsamic vinegar (instead of 2) at the end of cooking to glaze the chicken, then set it aside. Then I continued the recipe in the same pot.

Fresh Pear Cake

As is, it was too sweet for me, and i also thought it was still too high in fat. By changing the flour to whole wheat flour, cutting the sugar in half, cutting the oil in half and adding 1/3 cup of milk it turned out to be a 5 star recipe, and it stayed moist for days (which never seems to happen when I bake a cake)

Vegetarian Bean Curry

It tasted more like Indian chili than a curry, but still very good. I think next time I'll double the curry powder and par-cook the lentils in 1/2 cup of water, and then only simmer for 30 minutes.

Spinach Stuffed Chicken Breast

Looked great but tasted very bland. I substituted 1/2 cup sharp cheddar and a finely chopped jalapeno pepper for the pepperjack, because I can't get pepperjack, but other than that I followed the recipe.

Chili con Carne II

My husband and I loved this chili. The cloves and cinnamon make this recipe and should not be left out. I used smoked paprika, and two fresh jalapeno peppers and a spicy chili powder, and cut back the oil by 2T; it turned out nice and spicy.

Grilled Chicken Kabobs

I thought there was way too much oil when I made this the first time but it was otherwise really great, so now when I make this, I use 2 tbsp olive oil and 1/4 cup + 2 tbsp lemon juice. Thanks!

Serbian Ground Beef, Veggie, and Potato Bake

I used a lb. of red potatoes sliced (but not peeled). I thought it was very good, but the potatoes didn't look very appetizing, and they didn't have much taste. The meat mixture was super tasty. Next time I would just cube the potatoes and mix them in with the meat.

Sweet Potato-Turkey Meatloaf

We don't like ketchup, so we left that out, and I used spicy bbq sauce instead of honey bbq sauce, since that's what we had on hand and it turned out quite nice.

Amber's Sesame Chicken

After a few adjustments, my husband and I thought this tasted outstanding. I cut the oil down to 2 tbsp to cut back on fat (it makes the end result a bit sticky, but that doesn't affect the taste), then doubled the five-spice and tripled the honey and teriyaki to make enough sauce
