Brooke's Best Bombshell Brownies

The texture of this brownie is amazing. Per a suggestion from another reviewer, I added 1/2 t baking soda. I also used 2 cups of white sugar and 1 cup of light brown sugar. The taste was good, not great. It lacked a flavor umph. Next time, I will use dark chocolate unsweetened cocoa and more of it. And maybe some instant coffee granules. Will definitely make again.

Chicken Piccata II

Not a bad rescipe. I used 2 TBSP of lemon juice versus 3 TBSP just because I'm not a fan of a super lemony sauce. I added 1 TBSP of capers and doubled the recipe by omitting the boullion powder and water and opting for a good chicken stock. I also added 1/4 C of white wine. My breading did not stick. I should have put it in the refrigerator for half an hour or not submerged the chicken in the sauce.

Chocolate Pancakes

These were tasty pancakes. It had a nice chocolate flavor without being overly sweet. I added 1 tsp of baking powder hoping for a fluffy pancake but they were, excuse the expression, "as flat as a pancake". They were not fluffy at all. I didn't find the batter to be particularly runny so I was expecting the pancake to rise but it didn't. Instead of mixing the chocolate chips in the batter, I sprinkled them on top after I poured it into the pan.

Slow Cooker Salisbury Steak

LOVE LOVE LOVE this recipe! Instead of using a slow cooker, I browned it in a pan and then baked it. It got the seal of approval from the family. Will definitely make again! I did use one part of cream of golden mushroom and one part cream of chicken.

Downeast Maine Pumpkin Bread

This is a good recipe. It is moist but a bit more dense than I prefer. I used suggestions per other bakers and used less than 3 cups about 2 1/4 cups of sugar ... 1 1/4 cup of white and 1 cup of brown sugar. I probably will not use this recipe to make pumpkin bread again.

Garlic Shrimp Scampi

Chocolate Cake II

Spectacular recipe. Another reviewer stated that this recipe was on the back of Hershey's cocoa at one time with the exception of 1) buttermilk instead of regular milk and 2) 1 tsp of salt. I subbed with those and the cake was super moist and delicious! Definitely making this again!

Chicken Cordon Bleu II

Wonderful recipe. Made it for company. Received rave reviews. I did coat with seasoned bread crumbs along with the flour/paprika. I doubled the sauce per the suggestion of other reviewers. I used only half of the one called for due to personal preference and used chicken stock for the rest. I did use whole milk instead of heavy cream because it's what I had. It didn't seem to affect the outcome. I did add about 1 t. of Italian seasoning and 1/2 t of garlic powder to the sauce just to give it some more flavor. Excellent! Served it with garlic smashed potatoes and sauteed spinach.

Cool Cucumber Salsa

Took it to a pot luck and the guests were all hovering around it. I used 1/2 yellow onion and 1/2 red onion just for that extra splash of color. Also didn't have fresh tomatoes ... used canned diced tomatoes instead. Omitted the dill because dill is not for me. Also used lemon juice instead of lime -- what I had on hand. I used 2 garlic cloves per another reviewer's suggestion. Very glad I did. Could have used another tablespoon of lemon to bring out more flavor. Using 1 teaspoon rather than 1/2 t would have given it more flavor. Other than that, wonderful recipe!!

The Best Meatballs

Great meatballs! I used all beef because that was all I had. I also used Italian seasoning instead of the flat leaf parsley...again, all I had on hand. Didn't have stale Italian bread so I used seasoned Panko crumbs - Use only 1 1/2 C instead of 2 C (per another reviewer) and cut down on the water to about half. I did not fry it in oil. Baked it for 30 mins on 350 degrees on a cookie sheet sprayed with Pam. Kids ate them up!

Chicken Piccata with Artichoke Hearts

Delicious recipe! Husband said it was excellent. Added more salt, black pepper and garlic powder and about 1 t. of Italian seasoning to add more flavor as other reviews mentioned it being on the bland side. Used 2 cloves of garlic, omitted the wine(didn't have on hand) and just used 2 c of chicken broth. Also omitted the caper liquid per another reviewer's suggestion. The whole family enjoyed the meal!

Bread Machine Pizza Dough

The dough texture was great! I'm not a beer fan and would have given 5 stars but I felt the beer taste was too strong. Next time, I will take the suggestion of cutting the beer to 1/2 cup and 1/2 cup of water. I added Italian spices to the dough. Smelled wonderful! Made a very thick crust. Next time, I try this recipe, I will cut the dough in half and make two smaller pizzas.

Chewy Chocolate Chip Oatmeal Cookies

Fantastic recipe! Baked my first batch today and it turned out wonderfully. Followed the suggestion of 1 tsp of baking soda, cutting the salt to 1/2 tsp and 1 3/4 C of flour. I didn't have brown sugar so I used 1 1/2 C total of white sugar with 2 1/2 Tblsp of molasses. It gave it a nice dark color. Not a fan of nuts so used 2 C of semi-sweet chocolate chips. DELICIOUS!

Best Bread Machine Bread

I initially tried a different white bread recipe and that failed horribly so I decided to try this one. My bread came out perfectly. I took the recommendation of adding 1/2 tsp more salt and also added 1Tbsp of wheat gluten. The bread rose beautifully with a nice crust and very soft inside. I would use it for making sandwiches and to serve with dinner.

Zucchini Brownies

This is my first review on allrecipes.com. These brownies are AWESOME. A friend of mine served them at her dinner party. I loved it so much, I asked for the recipe and was SHOCKED to learn zucchini was in it. I followed the recipe as is for the brownie. No need for the frosting as I'm not a frosting fan.
