Mom's Buttermilk Pancakes

Reviewed: Dec. 22, 2011
These were really good when the recipe is followed. The recipe deserves all five stars just as is. I think that they would be GREAT if I added a little splenda and vanilla and a pinch of baking powder.

this was tasty, a little drier than I had hoped but that should be really easy to fix next time I make it and I will certainly make it again.

Chocolate Chip Cookies for Special Diets

Reviewed: Nov. 21, 2011
they taste lovely. I made mine with stevia. I made the smallest cookies I possibly could and it came out to 38 so I had to refigure the nutrition--I am diabetic and have to count every carb. The are very yummy but I would recommend making half the cookies it calls for and just double what the nutrition says each cookie is for other people who have to be a precise with their diets as i do. I enjoyed them with almond milk so I could have a few at a time (almond milk only has one carb compared to cows milk which has 11). Well, I enjoyed them the first time and I am about to get up and make them a second time. I will certainly keep these in the freezer from now on as a fast and tasty snack. Just pop it in the microwave for about 20 seconds and I have a warm, gooey, chocolaty cookie. mmmmmmmmm, chocolate!

this was certainly good and we will make it again. I am giving it four stars instead of five because it was not fantastic, but certainly good and simple to make. Unique flavor, we really enjoyed it. moist and tasty, coulda used a little more chocolate imo.

Spicy Grilled Cheese Sandwich

Reviewed: Apr. 28, 2011
Normally I do not rate a recipe if I make a change (pet peeve of mine) but I figure everyone is just gonna use whatever cheese they like anyway soooooooo I hate American cheese and used mozzarella instead. I think it is a great sandwich. Very tasty, I expected it to be good but not 5 stars good. I will make this very often. Will probably try different cheeses too, I think provalone or mild/medium chedder or colby would all be good. great way to sneak healthy food (tomato and peppers) into food my kids like which is another +. Thank you for the recipe!

Thick Chocolate Pudding

Reviewed: Oct. 1, 2010
I thought four stars, my daughter thought five so I gave it five. Made it exactly as the recipe states. Finally found a recipe that will give pudding a good texture with non-fat milk which is a big plus in this family. I eat my pudding hot and it was very good, my kiddo's eat theirs cold and thought it was good. So which ever way you prefer should come out great. Use the biggest bowl that will fit in your microwave! My bowl was about 40% the way full and by the time it was done my microwave looked as though it was the river bed for a stream of chocolatey goodness, which probably robbed us of about one serving of dessert. Great recipe, thank you for sharing!

Creamy Rice Pudding

Reviewed: Sep. 8, 2010
great recipe as is, earns five stars but we have a few things we do that we would like to pass on. Leave out the raisens, it is great plain. If you want it sweet just up the sugar to 1/2 cup. If you like, it is great with diced peached or diced banana.

Chocolate Cornstarch Pudding

Reviewed: Sep. 2, 2010
I boiled for five minutes and it was still thin, I was looking for something a little thicker than the reviews lead me to believe this was. However it tasted good and had the right amount of chocolate. It went from measuring spoon to tummy in under 20, certainly cannot complain about that. Kids and hubby thought it was good too. If you want tasty homemade taste and not elegant, fancy restaraunt stuff this is a great recipe. I have added it to my recipe box and will certainly make again and again. I will experiment to get it thick though. It is not as thick as Jello brand (tastes much better though). Thank you for sharing this recipe with us, Kelly.

Buttery Soft Pretzels

Reviewed: Aug. 24, 2010
hmmm.... any help would be great. The dough fell apart in the water. I solved this by boiling the water and leaving them put for about a minute. Some tasted really strong of baking soda. A few tastes really good but like bread only--no pretzel like crust or chewiness. Considering all the great reviews I probably did something terribly wrong. Besides boiling the water on some of them the only other change was using 4 cups of flour, not five.

Elephant Ears

Reviewed: Jul. 10, 2010
These were good but too much cinnamon in the topping, either cut the cinnamon in half or double the sugar. Also, they taste much better if you brush with melted butter before adding the topping. With the above changes I would rate five stars.

Magic Peanut Butter Middles

Reviewed: Jan. 27, 2010
These were not hard at all. I mad the peanutbutter batter into balls and then set them in the fridge for an hour. Then i started on the chocolate part. I just flattened it out in my hand and wrapped it around the peanutbutter part. It was very simple to do just make sure you have the time b/c it sounds like people who did not use the fridge had a really hard time. they tasted great and will certainly make them again.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Nov. 9, 2009
Very good recipe. Either use half the chocolate chips called for OR double all of the other ingredients. I recomend the latter of the two becuase it does not make very many. Good with semisweet or milk chocolate chips. No other changes to the recipe needed.

Quick Black Beans and Rice

Reviewed: Sep. 4, 2009
I was worried it might come out mushy after reading some other reviews. So when the timer went off and it was a little on the dry side with the rice not totally done I was suprised. I added 3tablespoons of water and gave it another five minutes. It was perfect!!! My family loved it, it is cheap too. I will certainly make this a regular meal at my house. Thank you for this lovely, simple recipe. Note: recipe says four servings, well it fed all four of us twice and it was the total meal served only with a half ear of corn as a side.
