Tofu Peanut Stir-Fry

My eight-year old daughter is finding that she's not a big fan of meat, and wanted to try cooking tofu for dinner. I, on the other hand, am a big fan of meat and generally turn my nose up at tofu. I decided to humour her, searching for highly rated tofu dishes on Allrecipes. She honed in on this recipe. It was simply amazing. My whole family loved the dish, even dad the carnivore (me). We prepared this with fresh vegetables: red pepper, snow peas, bok choy, green onion, and water chestnuts. My only change on this one would be to either reduce the oil for frying the tofu or to drain it after frying. The remaining oil didn't combine well with the peanut sauce, and left a bit of a soupy separated pool of oil in the bottom of the dish. Thanks for posting, and for changing my opinions on tofu!

Cowboy Mashed Potatoes

Oma's Rhubarb Cake

Made this recipe to use some fresh rhubarb from the garden. Baked in a mini-loaf pan with eight mini-loaves, the batter nearly filled each mini-loaf and then baked up with a nice muffin-esque top. All I had on hand was low fat 5% sour cream, which seems to have worked well with this recipe.

Uncle White's Bread Machine Rolls

I've made these twice now, both with excellent results. The second time around I didn't have any buttermilk but made a sustitute by mixing 1 cup of milk with 1 tablespoon of vinegar and letting the mixture sit for 5 minutes before adding to the bread machine. Both times I got great reviews from my family (in contrast to another roll recipe I tried which to this day haunts my reputation in the kitchen). Highly recommended!

Beautiful Salad

This was a huge hit when we brought it to a dinner party, and I have to admit it's one of the top salads I've ever had. Served with Kraft raspberry vinaigrette and homemade honey-roasted almonds. We were unable to locate honey-roasted almonds at the store so we made our own: - 1 cup slivered almonds, toasted in oven for 30 minutes at 300 degrees - Stir the roasted almonds into a saucepan that contains 1 tbsp honey, 1tbsp oil, 1 tbsp water until liquid disappears - Toss in a mixture of 1/4 cup white sugar and 1/4 tsp of salt.

Warm Apple Buttermilk Custard Pie

This has become a regular at my house, whenever we have leftover buttermilk I pull out this pie recipe. My edits: - 5-6 small granny smith apples - 1/4 cup sugar with the apples - 1 cup sugar with the custard - made in a deep-dish pie plate with pilsbury crust I've made the original recipe as well, and it wasn't well received (too sweet, not enough apples). I find that increasing the apples and decreasing the sugar has made it a crowd-pleaser.

Mock Apple Pie

I've made this recipe twice, and the family loves it. However both times the top crust has burned. I'm not sure if that's due to the high temperature, or if I just need to cook it on the lower rack, but be aware and take caution with the upper crust.
