Simple Scones

These were positively awesome! The baked up light and tender with just the right amount of sweetness. I used dried cranberries and some chopped, dried apricots. A huge hit!

Chocolate Pudding Fudge Cake

I make this all the time and thought I would share some advice from experimenting with the recipe. One tip is to make the day before serving. We have found that the flavour is enhanced. Also, I have found that the results are better when I use name-brand cake mixes and puddings as opposed to the discount variety. Do NOT use low-fat sour cream, which contains gelatin. You can also use Greek yogurt in place of the sour cream. As for serving, try a raspberry or mango purée to pour on the plate when serving each slice.

Aunt Mary's Ice Box Cake

This is my husband's favorite recipe, known simply as 'pineapple squares'. I searched high and low for the recipe, which used to be on the box of vanilla wafers. I make it with whipped cream instead of non-dairy whipped topping and the pecans add an extra special touch. Definitely a keeper!

Janet's Rich Banana Bread

I tried it once, following the recipe exactly and it was OK. Then I read the reviews and adjusted it for my second attempt. I used margarine (room temp), yogurt instead of sour cream (because that's what I had), and 3 medium mashed bananas. We are now in banana bread heaven!

Clone of a Cinnabon

Made these for Easter brunch - huge success! Soft, warm, full of flavour, yummy! Only change I made was to use store-bought cream cheese frosting, which was on sale for $1.50/jar. Definitely a keeper.

Indian Slow Cooker Split Pea Soup

Made it as is and loved it. Second time, I borrowed some inspiration from our favorite Indian restaurant. I reduced potatoes by half and substituted chopped cauliflower of about same size as hash browns. Additionally added cumin and curry powder. Yum, yum. Even better reheated.

Texas Sheet Cake V

Made this again as the finish to a BBQ dinner. I cut back the sugar in the cake to 1 and a half cups and in the icing to 3. No noticeable difference in taste - just a little easier on the teeth and waistline. Success and coliments all around.

Old-Fashioned Corn Relish

These are very good, but I prefer the traditional walnuts instead of almonds. Even better, but a bit more costly, I use pecans in the bottom layer. Also, ensure you use custard powder and not vanilla pudding, which is far too sweet.
