I used this recipe in chicken parmesan. It was excellent, especially for those that don't like chicken with a lot of breading. The only changes I made were to marinate the chicken in the oil mixture for a while, and add a few favorite seasonings to the crumb mixture. I did fry the chicken in the leftover oil mixture for a few minutes on each side since I was making chicken parmesan and would be baking it in sauce.
