Upside Down Chicken Rice

Delish! I accidentally poured half the onion soup packet into the rice mixture and then noticed I wasn't supposed to do that. So I mixed it into the rice and then poured the rest of the packet on top of the chicken, it was great that way! Whole family loved it. We added extra rice and a bit more water.

Buffalo Chicken Wing Soup

This was so delish! I boiled the chicken in chicken broth and then after shredding it, I soaked it in the broth for a minute and then added the chicken to the soup. The blue cheese made this soup. Even my friend who doesn't like soup, ate 2 bowls!

Chelsea's Enchiladas

These are so yummy. I always want to like enchiladas and I am always disappointed because they never taste like these! Such a wonderful and easy recipe. If you want to make it a bit less fatning, don't add the cheese to the sauce and just add it to the top. But the origional recipe is so tasty! It's also great to buy a rotisserie chicken and shred it for the sauce, then you don't have to boil chicken!

Homemade Sweet Italian Sausage (Mild or Hot)

This is great! I used ground turkey to make it a bit more healthy and it was delicious. I didn't have time to let the seasonings sit for 12 hours before cooking, so I cooked it right away and it was still really yummy. I think I'll use a little less salt next time, and a little less crushed red pepper. I love it spicy, but it was too hot for my son. I'll definitely make this again.

French Toast Casserole

Brown Sugar Chicken

This is such a yummy and easy recipe that takes 5 minutes to prepare and even the kids love it! You can make it healthier by adding less butter. Still delish! We have also had it over quinoa instead of rice and it's wonderful!

The only chocolate chip cookies worth eating

This is the the best chocolate chip cookie recipe. These are sooooo good! These are firm yet chewy, and they aren't flat cookies. So incredibly good! Follow the recipe exactly!

Italian pot roast

This has a mistake in it. You are supposed to use a packet of Italian dressing seasoning and sprinkle half of it over the roast, and then the other half over the veggies on top of the roast.

Sweet and Spicy Green Beans

This is my new favorite veggie side dish. YUMMM! I did it mostly the same but I didn't have garlic chili sauce, so I used hot pepper sauce with extra garlic and I used olive oil instead of canola to make it healthier. Sooo good! I even used this as a stir fry sauce over veggies and steak the other day and it was delish!

Teriyaki Sauce

Oh my god, this is so delish! I used fresh grated ginger and some white wine (pino grigio) because I didn't have sherry. So good. I just boiled rice and veggies and poured this over the top, incredible.

Heavenly White Cake

Oh wow, I'm eating a sliver of this cake right now and it is delightful! I'm not a huge cake fan, but wow! This is amazing. I'm having a baby shower tonight and needed a white cake that I could put blue food coloring in (its a boy) and I think I picked the right cake. Delish. Now I am going to put white frosting on it and so when people cut in, it will be bright blue inside! I also followed the other people's advice and added an extra 1/2 cup milk and made the meringue at the end. Amazing cake.

Frozen Fruit Salad

I took this to a brunch the other day and everyone loved it, the adults and the kids! Don't listen to the lady who said the bananas thawed to mush because you aren't supposed to thaw this recipe. Its supposed to be served frozen, just not rock solid. I usually don't like bananas, but they are great in this recipe. I also used sliced strawberries because the solid ones are too hard to bite, they are too cold when frozen. Yummm!!!

Sam's Famous Carrot Cake

Amazing! I made this for my husband for his birthday and my family LOVES carrot cake, and they all said that this was by far the best carrot cake they had ever had. I made a cream cheese frosting with a little lemon grated in it. Fabulous!

Ginger Glazed Mahi Mahi

Delicious! My husband hates fish, an he ate a second piece of this. I also followed another's advice and made extra marinade to use as salad dressing. My mouth is watering thinking about how incredible it was! We grilled ours on the bbq outside. Delish!
