Vegan Brownies

These were pretty good, pretty greasy though. I think next time I will use applesauce instead of oil. I have made these twice, once with veg oil, and the second time with olive oil and whole wheat flour. It was great with the olive oil and wheat flour and it made it healthier!

Sam's Famous Carrot Cake

Amazing! I made this for my husband for his birthday and my family LOVES carrot cake, and they all said that this was by far the best carrot cake they had ever had. I made a cream cheese frosting with a little lemon grated in it. Fabulous!

Ginger Snaps II

These were super yummy! I ate way too many! I also added double of the spices, but wish I would have added triple the ginger. I also added some allspice and nutmeg. We loved them!

Chocolate Chip Muffins

These were really good! I didn't have any oil, so we used 1/3 cup melted butter. I also followed the others advice and used 1 cup of milk. Mmm, these were pretty tasty and easy, will def make again!

Double Crust Bean Pie

Mmmm!!! Sooo good! Made a few minor changes, just because I didn't have some things. I didn't have a green bell pepper, so I added one minced Jalapeno, and I added cumin and minced garlic. I also added corn and used Extra Sharp white cheddar cheese. Soooo good!!!

Chicken Oreganato

Super easy and tasty. I made this for my husband and I, I used the thighs the first time I made it, but that only gave us a small ammount of meat and we were still hungry! So then I used breasts, I used a half of a lemmon for 2 and so that the breasts were cooking in the juice/oil. So tasty!

Pumpkin Cookies I

i really liked these, i added one egg, and allspice. i also made them with splenda to cut the calories. really yummy, i only wish they had a little more pumpkin flavor. i also had to cook them for about 16 minutes instead of 10

Broccoli, Corn, and Green Bean Saute

this recipe was awesome, so easy! i have the hardest time getting my one year old to eat vedgetables, and she gobbled this right up. one time i made this and didn't have feta, so i used swiss cheese and it was good that way as well.

Authentic Enchiladas Verdes

this was so good! my husband and i loved it. i think next time i will use 3 serrano peppers instead of 5, it was so hot. also, i only had boneless chicken breasts and it tasted great. i saved the onions and garlic from the chicken broth for an extra garnish, so tasty!
