Best Tuna Casserole

5 stars for a great base recipe. I modified it with what I had on hand and it turned out amazing. I sauteed the onions with garlic in a tad bit of butter first. I used 1 lb box of Barilla elbows and added about a cup each of frozen peas and corn. I used 2 cans of 25% less sodium cream of mush soup, and just added garlic powder, black pepper, chili powder and seasoned salt to taste and one 12 oz can of albacore tuna, juices and all since I had no milk to add. I put a small amount of cubed pepper jack cheese, along with shredded colby jack mixed with everything. On top I layered a thin layer of colby jack, a few strips of pepper jack, then thin layer of bread crumbs followed by another thin layer of shredded colby jack. I baked it same as the recipe called for. Everything was excellent.

Superfast Asparagus

Thank you for a simple, yet delicious way to make asparagus. I drizzled and brushed them with EVOO. I didn't have cajun seasoning, so I used Adobe seasoning with garlic powder and pepper.

Sweet and Sour Kielbasa

I followed this recipe loosely since I already had my kielbasa, garlic, sauteed onions and mushrooms in the skillet. I added some ketchup, Sweet Baby Rays BBQ sauce, Worcestershire sauce, lemon juice, honey, butter and pepper. It was mildly tangy served over cellentina pasta. Everyone had seconds. Thanks for this recipe!

Pork Marsala

My family loved this! I substituted Mocsato instead of Marsala since that is all I had and the store was out also. I used canned mushrooms, again, that is all I had. I sauteed mushrooms and onions in the oil and butter first, removed them and then follows the rest of the steps with Moscato. It is amazing and so tender! I served it over thin spaghetti with green bean casarole as a side. Next time, I will do it the same way as I did this time. Thanks so much for this recipe!

Curried Chicken

We've been craving Coco's curry like we had overseas. This recipe really helped. I made changes per what I had on hand. I boiled boneless skinless chicken breasts and added some fresh cut carrots. In another pan, I added the butter, apples and onions and seasoned with cumin, turmeric, chili powder, paprika, black pepper and salt and cooked til tender. Then added cream of mushroom soup (2), the carrots, the chicken breast (finely chopped), 2 cubes of mild curry sauce and one finely chopped pear. I also put breaded chicken patties in the oven for 15 min. To serve, I put the sticky rice first, then the curry, then a chicken patty cut in strips, a little more curry and topped with a little fine shredded cheese. Thanks so much for this recipe. We have a keeper!
