Tasted really good! I used half of a 28 out can of diced tomatoes and used the juice from that with one can of tomato soup (instead of two). I also added oregano and garlic which was good. I used the recipe for 6 peppers even though I only had 4 peppers (but they were large) and I barely had enough of the rice/beef mixture. Also, while cooking the rice, make sure to stir it and add extra moisture if needed, I almost burned it on medium heat (5/10). I think I'll try adding beef broth next time. I also forgot to add the cheese until I had already stuffed the peppers... oops. I mixed it in but I think it would have helped the cheese melt better if I had added it to the rice and beef before I had stuffed the peppers. Boiling the peppers before was definitely a great idea and I added cheese in the bottom of the peepers which was a great touch. Overall, we really liked it and will definitely do it again!
