This turned out FANTASTIC!! I did a few things different, I used a meat tenderizer on the loins (the one that pokes a bunch of little holes all over the place so the juices can really get in there) and i marinated it for 24 hours covered in the fridge and cooked it on low in the crock pot form 7:30 am to 6:40 pm. adding a cup of water at about 5pm to cover the meat. The meat was so tender and juicy that it fell apart when i picked it up. the only noise at the dinner table were the sounds of chewing and mmmmm. I served it with Baked beans and a bleu cheese salad!! yum yum! it is almost so perfect that i can used the left overs to make bbq pork sandwiches, another fav!!
