Chicken Piccata

I was very impressed with the finished product. It was far more flavorful than I anticipated given how simple it was to prepare. I followed the recipe with just a couple minor tweaks. As recommended in another review, I beat an egg and coated the chicken with it before adding the flour mixture. The recipe called for white wine or chicken broth, and I used both ... adding a little extra wine mid-simmer. I also had white mushrooms in my fridge so I sliced them and through them on top, letting them simmer with all of the juices. I squeezed all of a large lemon over the chicken the last few minutes simmering, which was not overpowering at all. The result was soft, tender chicken where hints of each flavor were apparent but none of them overpowering. I will make this one again!

To Die For Blueberry Muffins

I followed the recipe exactly except used 2/3 cup blueberries and 1/3 cup raspberries. Let me tell you -- they were AMAZING!! I hardly ever bake, and I was so pleased I was able to make a delicious sweet treat that is simple, quick and inexpensive. My husband and friends absolutely loved them, and I will be making them again very soon.

Sweet Restaurant Slaw

So yummy! I followed this recipe as directed except used real mayo instead of Miracle Whip, and omitted the poppy seeds. Wow! It was absolutely delicious and so easy! After reading other reviews I had concerns it may be too sweet, but it wasn't at all. I suspect switching to regular mayo made it slightly more tart than Miracle Whip would have, and that is exactly what I was going for. I'm not sure from where, but it tasted 'familiar' to me. I let it sit in the fridge for a couple of hours before serving. While it did have a lot of watery dressing underneath it, it remained crisp, light, and crunchy. I simply used a slotted spoon while serving to release excess dressing. I will be making this again, and I will not change a thing!

Green Bean and Mushroom Medley

This is a very tasty spin on a vegetable medley. My husband and I really enjoyed this recipe, and it tasted great alongside the steaks and baked potatoes I made. I didn't use these exact measurements, but I used the recipe for reference and worked with basically the same proportions. I used all of the ingredients listed except for the plain salt (the seasoned salt and garlic salt were sufficient) and the white pepper (I used freshly ground black pepper instead). Also, I used baby carrots that I already had in my fridge, and I cut back on the onion. I used half of one large white onion, which was plenty. I followed the directions exactly except that I boiled the green beans a couple of minutes before adding the carrots after reading another review that stated the carrots cook faster. These little tweaks worked like a charm because the finished product was PERFECTION. I have to agree with other reviews that it tastes better than you expect. The butter, garlic, and seasonings really bring these already tasty veggies to life, and I will be whipping these up again soon!
