Teriyaki and Pineapple Chicken

If I could, I would give this a four and a half. Had a great flavor! It made too much sauce for my taste, but my bf loved the sauce. I will only use half the pineapple juice next time, and 3/4 C teriyaki. I really liked the cooking method, I was skeptical of not sauteeing the veggies before adding the liquid, but this way they stayed fresh and crisp. I also used cornstarch instead of flour, and that gave me a nice glossy sauce (even though it was too much!). Will make again.

Beef and Irish Stout Stew

This was great. Loved all of the leftovers we had because it seemed to get better and better! This does need some modifications, but it is very easy to suit to your tastes! I used a whole can of guiness as the recipe calls for. I found the bitterness went away the longer it simmered (about 3 1/2 hours for me). I added a T of sugar, a can of beef broth because I like my stews soupy, a bay leaf, and a shot of worsteshire. For the last hour, I added diced red potatoes. Loved the result!

Beer Bread I

SO easy and SO good! Made 'self rising flour' by adding baking powder and salt as other reviewers suggested. I also took more advice by adding a T of honey to the dry ingredients to add sweetness. My boyfriend was so impressed that I made homemade bread-- and that it was so good! Served with stew. YUM! This is an easy recipe to pull out when you need a quick and easy carb to round out the meal.

Chicken Cordon Bleu II

This was awesome, especially the sauce. I am giving it 4 stars because I did make a few changes. I spread Dijon mustard on each breast before adding the cheese. I also used an egg wash with garlic salt and the paprika added, and then coated each breast in Italian breadcrumbs. Finally, I seared the breasts in oil/butter for two minutes/side then finished them in a 350 degree oven for 30 minutes. I made the sauce in the skillet I used to sear the breasts. Turned out great. The sauce is especially amazing!

Garlic Mashed Red Potatoes

I usually make boxed mashed potatoes because for some reason making homemade intimidates me... Well, not anymore! This was so easy and yummy. The garlic is so easy to mash after its boiled with the potatoes, which surprised me, and the Parmesan adds a subtle salty flavor in the background. Red potatoes like this cook fast and are so creamy and almost slightly sweet tasting. I left the skins on and liked the texture that added.

Easier Chicken Marsala

This was okay... I did make some additions including garlic and onions. I didn't like the texture of the flour dredged chicken, and I think the mushrooms would be better if I'd taken the chicken out of the pan and sauteed them separately. As they were, they just got soggy.

Baked Asparagus with Balsamic Butter Sauce

This is so simple and delicious! I swapped the soy/balsamic ratios as in recipe and was very happy with the result. This is a great side dish and perfect for entertaining.
