About this Cook
I have always been interested in food, eating, and cooking. I was fortunate to learn so much from my grandmother and my mom, who are the best cooks I know! I've been out of the house as a college undergrad for the last three years now, and grocery shopping and trying new recipes has been a joy of mine. My boyfriend, who I live with, is my very patient and encouraging taste tester. And if anything goes wrong, our dog doesn't mind my mistakes ;-)
My favorite things to cook
Breakfast! I make killer omelets & fritatas. Like most full-time employees, I am drawn to making quick & easy dinners after a long day at work. So I make a lot of skillet meals, chicken dinners, and pasta.
My favorite family cooking traditions
Typical mid-western: meat and potatoes! Fresh veggies and fruits when they are in season...
My cooking triumphs
Breaking out of the box and trying new methods- grilling, slow-cooking, etc. Currently working on dessert/baking skills.
My cooking tragedies
Desserts and baking... I usually just "loosely" follow recipes, so it can be a challenge for me to be exact when baking! I've learned that "eyeballing" is not a good strategy to apply to baking powder!

Teriyaki and Pineapple Chicken
If I could, I would give this a four and a half. Had a great flavor! It made too much sauce for my taste, but my bf loved the sauce. I will only use half the pineapple juice next time, and 3/4 C teriyaki. I really liked the cooking method, I was skeptical of not sauteeing the veggies before adding the liquid, but this way they stayed fresh and crisp. I also used cornstarch instead of flour, and that gave me a nice glossy sauce (even though it was too much!). Will make again.

Beef and Irish Stout Stew
This was great. Loved all of the leftovers we had because it seemed to get better and better! This does need some modifications, but it is very easy to suit to your tastes! I used a whole can of guiness as the recipe calls for. I found the bitterness went away the longer it simmered (about 3 1/2 hours for me). I added a T of sugar, a can of beef broth because I like my stews soupy, a bay leaf, and a shot of worsteshire. For the last hour, I added diced red potatoes. Loved the result!

Beer Bread I
SO easy and SO good! Made 'self rising flour' by adding baking powder and salt as other reviewers suggested. I also took more advice by adding a T of honey to the dry ingredients to add sweetness. My boyfriend was so impressed that I made homemade bread-- and that it was so good! Served with stew. YUM! This is an easy recipe to pull out when you need a quick and easy carb to round out the meal.
