Make Ahead Lunch Wraps

Very good and very convenient. I added a package of taco seasoning to the rice. Also, I had to make some substitutions as can sizes are different here in Canada -- I used three 19oz cans of black beans, two 19oz cans of romano beans (I couldn't find pinto), one 19oz can of mini-diced tomatoes, a couple TB of chopped pickled jalepeno and a 12 oz can of corn. I also cut the cheese amount by half to save fat/money. I used 1 cup of filling per wrap and got a total of 18. Taste best when dipped in something like salsa.

Vegetable Pizza I

Very good and stores well in refridgerator (though it loses its crispness.) Makes an excellent summertime lunch. I used a food processor to chop the veggies so that they would be small and uniform (make sure that you don't chop them too much or you end up with mush.) The food processor saves a lot of time as well.

Creamy Chocolate Yogurt Pudding

Very good -- the texture is like chocolate mousse but the taste is a little bit different because of the yogurt. It's really quite pleasant and had to believe that it's low fat! I used ultra low fat whipped topping instead of the light that the recipe calls for so it was even lower in fat. You really do have to use gelatin-free yogurt or it doesn't drain at all. The drained yogurt is like a sweet cream cheese -- it adds the richness of a cream cheese without the fat. I will definitely make this again but will double the recipe next time!

Award Winning Soft Chocolate Chip Cookies

Amazing -- these are without a doubt the best chocolate chip cookes that I have ever made. I like to use at least half milk chocolate chips and then they are to die for. This recipe has become the only choclate chip cookie recipe I use. They freeze well, which is good considering how huge the batch is.

Chocolate Rice Pudding

Pretty good -- a really nice change from plain old rice pudding. I left out the raisins and used short grain rice (short or medium grain rice always works best in rice pudding) and was quite pleased with the results. The double boiler part took 40 minutes for me. Will definitely make again.

Cheesy Vegetables and Noodles

Okay, as long as you like processed cheese. I used twice the amount of pasta called for and used scoobi-do pasta instead of rigatoni -- it had just the right amount of sauce.

Southwest Baked Pasta and Cheese

Very good and very easy. I added a can of black beans, drained and rinsed, as another reviewer suggested and left off the corn chips as they go soggy on the leftovers. A great vegetarian main dish.

Au Gratin Potatoes

Good and easy, but a little bland. I'm going to make it again but I think that I'll add some salsa along with some black beans or ground soy. Excellent potluck dish as it makes so much, but it reheats well if you are making it for fewer people.
