Simple Summer Smoothie

Forgot to add the honey but didn't miss it. I used frozen raspberries instead of cherries and low fat vanilla yogurt. No ice required since all the fruit, including the banana, were already frozen. Excellent. Perfect for hot summer afternoon.

Beaker's Vegetable Barley Soup

Loved it! Made it exactly as directed and it was perfect! I may substitute the chickpeas (garbanzo beans) for something else next time but that's just personal preference. You can play around with the veggie content on this to suit personal preference but the STOCK is to die for. First time I've ever used curry in my kitchen and I fell in love! I also used pearl barley and had no issue with it being too thick at serving. Thanks for sharing this recipe, I'll be using it often.

Butternut Squash Soup

This soup is to die for! My husband muttered "YUM!" after every spoonful. I didn't change a thing and it served us two nights with crusty bread or rolls on the side. Thanks for posting, this is a keeper for sure!

Grilled Tilapia and Mango Salsa

Served this tonight along with Lemon Basmatic Rice also on the AR site and we enjoyed a really really nice light dinner. I was a bit skeptical about the filets in the foil packets but it worked out perfectly with no mess or fuss. I too added the avocado because I had one on hand that needed to be used up and the cilantro because mango and cilantro are meant to go together. I will be doing these again often. I highly doubt this dish has 29.7 grams a fat as listed. Something must be wrong with the calculations.

Banana Berry Smoothie III

Made this twice this week to enjoy on my way to work and LOVED IT! Didn't have frozen bananas so just used regular ones but I doubt it made any difference. This is now a staple in my house. Thanks for posting it.

Amelia's Tuna Macaroni Salad

I LOVE this salad. I make it now regularly for take to work for my lunch. My hubby is not a macaroni salad fan at all so this works out wonderfully. I didn't think anyone could make better tuna macaroni salad then my mother did but this comes really really close. I've made it twice with different variations each time, never have used the peas simply because I don't have them in the house yet. I use about 4 green onions instead of sweet only out of personal preference and do not use eggs. The salad doesn't suffer for the lack of eggs. This last time I made it I used 2 cans of tuna and added a tablespoon of dijon. Not sure if I like the dijon all that much but the point is, this recipe is either as is or as a starting off point to add or not add according to your personal preference.

Chef John's Shepherd's Pie

Loved it!! Only thing I didn't like was the potatoes tended to be a bit mushy but that might be because I used reds instead of the ones suggested in the recipe. I usually prefer reds but next time I'll try the russets for this recipe. (I've never seen yukon gold at my grocery store). I did follow some suggestions and added onion and garlic to the meat while browning. This was awesome, even my potato hating husband liked it and I used the leftovers for two brown bag lunches for me during the week. Reheats very well. Now on my regular rotation, thanks for posting!

Divine Hard-Boiled Eggs

Except for the fact that these weren't quite done enough for my liking, they were otherwise perfect. I'll just make a note to leave set for another 5 minutes the next time. But followed instructions exactly, left them in the fridge for a couple of hours before peeling. Not only did these eggs peel easier than I have ever experienced before, they were bright white and yellow and tasted divine. THANKS!

Hearty Vegetable Lasagna

This is an incredible veggie lasagna. I also added chopped zucchini, shredded carrot and chopped broccoli to the sauce mix and used chopped spinach in the cheese mixture. You just don't miss the meat with this dish. We had it two nights in a row so it reheats in the microwave very well and then I also had for my lunch on day 3. Delicious lasagne, I highly recommend this recipe for your Meatless Mondays.

Cherry Bomb Chicken

This was some good chicken! I couldn't get habanero peppers this week at the store so used a different chili pepper but I'm not sure it made a difference. Otherwise followed the instructions exactly and this is really the best chicken I've ever had off the barbecue. A little bit of extra effort but so worth it! Thanks for posting this and providing the video. Gave me lots of confidence that I could make this dish successfully.

Juiciest Hamburgers Ever

Perfect! I have now found the perfect burgers for grilling. Used regular 2% milk and italian flavored bread crumbs cause that's all I had but otherwise, followed recipe exactly. Perfect!! I ate 2! I never eat 2! Thank you!

Chef John's Chicken Cacciatore

Great recipe! A bit labor intensive but totally worth the effort. Used legs with backs attached and an entire 14 oz can of tomato sauce. Served with spaghetti it made a really great dinner.

Hawaiian Pork Tenderloin

This was SO GOOD! I couldn't find any pineapple preserves so followed another reviewers suggestion and used apricot preserves instead. I can't see how it could have been any better. Served with rice pilaf, this was an incredible dinner Saturday night. With it being such a low fat meal, this is going to be repeated often at my house. Thanks for posting this.

Perfect Summer Fruit Salad

OMG This was SO good! I could live on this stuff. Didn't change anything, followed directions exactly. We had it over two summer night meals and still had leftovers that unfortunately had to be tossed because we couldn't eat it all before it started to go bad. I will definitely be making this a lot over the summer and even during the winter too. Thanks for posting my new favorite fruit salad.

Grilled Chicken and Pasta Salad

I made this last Monday for dinner and ended up having it for three nights in a row. Monday served as main course, Tuesday served alongside a fruit salad, Wednesday served alongside of leftover fruit salad and grilled pork chops. It was fabulous every single time. This is now my absolute favorite summer pasta salad and will be making it lots. We used Feta/Oregano low calorie dressing. What a great salad. Thanks for posting this.

Amazing Pork Tenderloin in the Slow Cooker

Really good. Made it exactly as directed. My slow cooker is little hotter then norm so the pork was just this side of being overdone. But it was delicious anyway and this now in my favorite file. Thanks!

Ham and Broccoli Quiche
