Broccoli with Garlic Butter and Cashews

I made this dish as a part of a New Year's Eve "feast" for my hubby and I. It was fantastic! I will definitely be adding this to my regular rotation. The only thing I will do differently next time is add a little cornstarch to the sauce so it's not so runny, and sticks to the broccoli better.

Brown Rice, Broccoli, Cheese and Walnut Surprise

I've adapted this recipe at bit, I don't use instant rice, I use a regular brown and wild rice mix. I cook the rice using vegetable broth, and then add to it the cooked onion and garlic (I use double the garlic). I steam the broccoli, and then add it to the rice, onion and and garlic, mix the cheese through it (I use about 1/2 cup more cheese than what is called for - I like it cheesy) and bake in the oven until the cheese is melted, and then sprinkle the toasted walnuts on top. It's a great recipe, I've shared it with several people who all think it's great.

Florida Strawberry Muffins

I made these muffins this week, and we liked them quite a bit. I added an extra 1/2 cup of strawberries (I used flavourful organic berries) as some of the other reviewers recommended, and doubled the amount of nutmeg for a little extra flavour. They turned out moist and yummy - would definitely make them again.

Quick Shrimp 'n' Pineapple Stir-fry

I made this recipe last night for dinner, and I have to say I was VERY disappointed with it. Not that it was bad - it was just "okay". Very bland and not very exciting. I don't even know what could be done to "jazz it up" - it was just a whole lotta nothin'.

Green Rice I

This was a fantastic recipe. It did need some salt and pepper, and in my opinion, the one cup of cheese wasn't enough - next time I'll double it. This will be added to my regular rotation!

D's Famous Salsa

This is an absolutely fantastic recipe. I make it for all the parties that we go to - and continue to get lots of requests for it! It is very important to remember to drain the tomatoes - otherwise it is too runny. This has joined my recipe book as one of my 'regulars'.

Black Beans and Rice

This recipe was VERY disappointing! I ended up adding an extra cup of broth because the rice wasn't finished cooking yet. My husband and I love spices, and this was extremely bland, despite the fact that I added about three times the amount of spices to it. The only way I'll make this recipe again is if I'm in a hurry and have nothing else to make!

Chickpea Soup II

I was disappointed in this recipe the first time I prepared it. Last night I made it for the second time, and it turned out wonderfully! I added some salt to the recipe, extra mushrooms, some diced canned tomatoes, and a TON of chopped spinach -- I served it to friends, who immediately asked for the recipe, including my variations to it!

Addictive Sweet Potato Burritos

I made these last night for my husband and I. I found them incredibly easy to make and very tasty. We like spicy food and so found them a bit bland - I will be making them again and adding more spices, onions and garlic for some extra zing! Overall a good recipe. I will definitely be making them again.
